Gluten-Free Chocolate Crust Key Lime Pie Recipe

Ingredients

For the Chocolate Crust

11 gluten-free chocolate sandwich cookies, finely crushed

2 tablespoons granulated sugar

1 tablespoon packed brown sugar

7 tablespoons unsalted butter, melted

For the Key Lime Filling

2 cups heavy whipping cream

1 teaspoon freshly grated lime zest

½ cup fresh lime juice

Approximately 4 fresh limes

1 (14-ounce) can sweetened condensed milk

Preparation

Prepare the Chocolate Crust

Preheat your oven to 350°F if you plan to bake the crust.

Place the gluten-free chocolate sandwich cookies into a food processor and pulse until they become fine crumbs. Transfer the crumbs to a medium mixing bowl.

Add the granulated sugar and brown sugar to the cookie crumbs and stir until evenly combined.

Pour the melted butter over the crumb mixture. Using a fork, mix thoroughly until all of the crumbs are evenly moistened and resemble wet sand.

Transfer the mixture to a 9-inch pie plate or springform pan. Press the crumbs firmly into the bottom of the pan using the bottom of a measuring cup. Continue pressing the mixture up the sides of the pan, using your fingers to compact the crust and create an even layer.

Bake the crust for 10 to 13 minutes until set and fragrant. Remove from the oven and allow it to cool completely before adding the filling.

If you prefer a no-bake crust, place the prepared crust in the refrigerator or freezer for 10 to 20 minutes until firm.

Make the Key Lime Filling

Pour the heavy whipping cream into a large mixing bowl. Using a hand mixer or stand mixer fitted with the whisk attachment, beat the cream until soft peaks form. Be careful not to overwhip.

In a separate bowl, combine the sweetened condensed milk, fresh lime juice, and lime zest. Stir until smooth and fully incorporated.

Gently fold the lime mixture into the whipped cream. Continue folding until the filling is smooth, light, and evenly combined. The mixture should remain airy and fluffy.

Pour the filling into the cooled chocolate crust and spread it evenly with a spatula.

Place the pie in the freezer for at least 2 hours or until firm enough to slice.

Serve the Pie

Remove the pie from the freezer 15 to 20 minutes before serving. This allows the filling to soften slightly, creating the perfect creamy texture.

Slice and serve chilled. For an extra-special presentation, garnish with additional lime zest, lime slices, or a dollop of freshly whipped cream.

Notes

For a stronger citrus flavor, increase the lime zest to 2 teaspoons.

Freshly squeezed lime juice produces the best flavor and is highly recommended over bottled juice.

If key limes are available, they can be substituted for regular limes to create a more traditional key lime pie flavor.

Store leftovers covered in the freezer for up to one week.

For clean slices, dip a sharp knife in warm water and wipe it dry between cuts.

If you prefer a softer texture, transfer the pie to the refrigerator for about 30 minutes before serving.

This gluten-free chocolate crust key lime pie delivers an incredible combination of flavors and textures. The crunchy chocolate cookie crust provides a rich foundation for the bright citrus filling, while the whipped cream creates a smooth and luxurious texture that feels light rather than heavy.

Because the recipe uses fresh lime juice instead of bottled juice, the flavor is vibrant and authentic. The sweetened condensed milk balances the tartness perfectly, resulting in a dessert that is sweet, tangy, creamy, and refreshing all at once.

Another advantage of this recipe is its simplicity. With just a handful of ingredients and minimal preparation time, it is an ideal make-ahead dessert for entertaining. Simply prepare the pie in advance and keep it frozen until needed.
