Ingredients

2¼ cups almond flour

¼ cup tapioca flour

¼ teaspoon sea salt

⅓ cup cold unsalted butter, cubed

1 teaspoon pure vanilla extract

Preparation

Prepare the Dough

Preheat the oven to 350°F. Line a baking sheet with parchment paper.

In a food processor or stand mixer, combine the almond flour, tapioca flour, and sea salt. Add the cold butter and vanilla extract. Mix until a soft dough forms and holds together when pressed.

Shape the Cookies

Place the dough between two sheets of parchment paper. Roll it out to about ½-inch thickness.
