Homemade Classic Chimichurri Recipe

Ingredients

1 cup water

1 tablespoon salt

1 head garlic, cloves separated and peeled

1 cup fresh flat-leaf parsley leaves

1 cup fresh oregano leaves

2 teaspoons crushed red pepper flakes

¼ cup red wine vinegar

½ cup extra-virgin olive oil

Preparation

Prepare the Salt Brine

Bring the water to a boil in a small saucepan. Add the salt and stir until completely dissolved. Remove from the heat and allow the mixture to cool to room temperature.

Prepare the Herbs and Garlic

Finely mince the garlic cloves, parsley leaves, and oregano leaves. For a more traditional texture, chop everything by hand rather than using a food processor.

Mix the Chimichurri

In a medium bowl, combine the minced garlic, parsley, oregano, and crushed red pepper flakes.

Pour in the cooled saltwater mixture, red wine vinegar, and olive oil. Stir thoroughly until all ingredients are evenly distributed.

Rest and Serve

Allow the chimichurri to rest for at least 30 minutes before serving. This gives the herbs time to infuse the oil and vinegar, creating a more balanced and flavorful sauce.

Serve immediately or refrigerate in an airtight container until ready to use.

Notes

For a smoother chimichurri, pulse the ingredients a few times in a food processor. Avoid over-processing, as the sauce should retain some texture.

Fresh oregano provides the most authentic flavor, but dried oregano may be substituted if necessary. Use 1 tablespoon dried oregano in place of the fresh leaves.

The flavor improves after several hours in the refrigerator, making this an excellent make-ahead sauce.

Use chimichurri as a marinade, dipping sauce, sandwich spread, or finishing sauce for grilled meats and vegetables.

Store refrigerated in an airtight container for up to 1 week. Stir before serving, as the oil may naturally separate.
