Cook Time: 15 to 40 minutes
Total Time: 55 minutes to 12 hours 50 minutes
Yield: 4 to 6 servings
Ingredients
½ cup fresh cilantro, finely chopped
¼ cup avocado oil
¼ cup freshly squeezed lime juice
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon sea salt
2 garlic cloves, minced
2 pounds boneless chicken thighs, bone-in thighs, or chicken breasts
Preparation
Step 1: Prepare the Marinade
In a medium mixing bowl, whisk together the chopped cilantro, avocado oil, lime juice, chili powder, cumin, oregano, sea salt, and minced garlic until the ingredients are thoroughly combined.
Step 2: Marinate the Chicken
Place the chicken in a shallow baking dish or a large resealable plastic bag. Pour the marinade over the chicken, making sure every piece is evenly coated. Cover and refrigerate for at least 30 minutes for great flavor or up to 24 hours for maximum tenderness.
Step 3: Bake the Chicken
Preheat the oven to 425°F.
Transfer the marinated chicken along with the marinade into a baking dish.
Bake until the internal temperature reaches 165°F.
Boneless chicken thighs will take approximately 15 to 18 minutes.
Boneless chicken breasts will take approximately 20 to 25 minutes.
Bone-in chicken thighs will require approximately 35 to 40 minutes.
Remove the chicken from the oven and allow it to rest for 5 minutes before serving.
Step 4: Grill the Chicken
Preheat the grill to medium heat.
Remove the chicken from the marinade and discard the used marinade.
Grill the chicken until it reaches an internal temperature of 165°F.
Boneless chicken thighs will cook in about 8 to 10 minutes, turning halfway through.
Chicken breasts will require approximately 18 to 22 minutes.
Bone-in chicken thighs will need about 30 to 35 minutes over indirect heat.
Transfer the chicken to a serving platter and let it rest for 5 minutes before slicing.
Step 5: Serve
Slice or shred the chicken and serve in tacos, burritos, enchiladas, rice bowls, salads, quesadillas, or alongside Mexican rice, black beans, grilled corn, or roasted vegetables. Garnish with fresh cilantro, sliced avocado, and lime wedges for a fresh finish.
Notes
Freshly squeezed lime juice provides the brightest flavor while naturally helping tenderize the chicken.
For extra heat, stir in ½ teaspoon cayenne pepper, crushed red pepper flakes, or one finely diced jalapeño.
This versatile marinade also works beautifully with shrimp, pork chops, steak, or vegetables.
Avoid marinating the chicken longer than 24 hours, as the acidity from the lime juice may begin to change the texture of the meat.
Always discard any marinade that has been in contact with raw chicken.
Store leftover cooked chicken in an airtight container in the refrigerator for up to 4 days.
Cooked chicken can also be frozen for up to 3 months. Thaw overnight in the refrigerator before reheating.
