Refreshing Homemade Honey Elderflower Cordial Recipe

Make refreshing honey elderflower cordial with fresh blossoms, lemons, honey, and water for drinks, mocktails, cocktails, and desserts.

Delicately floral, naturally sweetened, and wonderfully refreshing, this Refreshing Homemade Honey Elderflower Cordial Recipe captures the fragrant flavors of spring and early summer. Fresh elderflower blossoms are steeped with sliced lemons, honey, and warm water to create an aromatic floral syrup without refined sugar.

Homemade honey elderflower cordial is delicious mixed with sparkling water, still water, lemonade, or iced tea. It can also bring a delicate floral sweetness to cocktails and mocktails or be drizzled over yogurt, fresh fruit, pancakes, waffles, cakes, and other desserts.

Making elderflower cordial at home is surprisingly simple. After 2 to 3 days of steeping, the blossoms and lemons release their flavors into the honey mixture, creating a versatile seasonal cordial that can be kept in the refrigerator or frozen for longer storage.

Prep Time: 15 minutes
Steeping Time: 2 to 3 days
Total Time: 2 days 15 minutes to 3 days 15 minutes
Yield: About 4 cups

Ingredients

1 cup fresh elderflower blossoms, removed from the stems
2 lemons, thinly sliced
2 cups honey
3 1/4 cups water

Directions

Step 1: Prepare the Elderflowers

Carefully inspect the elderflower blossoms and gently shake them to remove any small insects. Remove the tiny blossoms from the thick green stems, discarding as much of the stem as possible because the stems may add bitterness.

Place the prepared blossoms in a large glass or ceramic bowl.

Step 2: Add the Lemons and Honey

Arrange the thinly sliced lemons over the elderflower blossoms. Pour the honey evenly over the blossoms and lemon slices.

Step 3: Heat the Water

Pour the water into a saucepan or kettle and heat it until it reaches a gentle simmer. Do not allow the water to come to a full boil because excessively hot water may diminish the elderflowers’ delicate floral aroma.

Step 4: Combine the Ingredients

Slowly pour the hot water over the elderflower, lemon, and honey mixture.

Stir gently with a wooden spoon until the honey has completely dissolved into the warm water and the ingredients are evenly combined.

Step 5: Steep the Cordial

Cover the bowl with a clean kitchen towel, cheesecloth, or another finely woven cloth. Place it in a cool, dark location and allow the mixture to steep for 2 to 3 days.

Taste the cordial after 2 days. If you prefer a stronger floral flavor, allow it to steep for 1 additional day.

Step 6: Strain the Cordial

Place a fine-mesh sieve lined with cheesecloth over a clean bowl or large measuring cup.

Pour the cordial through the prepared sieve. Gently press the elderflower blossoms and lemon slices to extract as much liquid as possible without forcing any solids through the cheesecloth.

Step 7: Bottle and Refrigerate

Carefully pour the strained cordial into clean, sterilized glass bottles or jars. Seal the containers tightly and refrigerate the cordial until ready to use.

Step 8: Serve the Cordial

Mix the honey elderflower cordial with sparkling water, still water, lemonade, or iced tea, adjusting the amount to suit your preferred level of sweetness.

The cordial can also be added to cocktails and mocktails or drizzled over fresh fruit, yogurt, pancakes, waffles, cakes, and other desserts.

Notes

Harvest elderflowers on a dry, sunny day when the blossoms are fully open for the best flavor.

Use only elderflowers that you can identify confidently and that have not been exposed to roadside pollution, pesticides, or other contaminants.

Avoid washing the blossoms unless necessary because much of their fragrance comes from the natural pollen. Gently shake away insects and debris instead.

Remove as much of the thick green stem as possible because the stems may give the cordial a bitter flavor.

Taste the cordial after 2 days of steeping. Allow it to steep for the third day if you would like a more pronounced elderflower flavor.

Store the finished cordial in a tightly sealed bottle or jar in the refrigerator for up to 3 weeks.

For longer storage, freeze the cordial in freezer-safe containers or ice cube trays. Leave enough room in each container for the liquid to expand as it freezes.

Frozen cordial cubes are convenient for adding individual portions to sparkling water, lemonade, iced tea, cocktails, and mocktails.

When giving the cordial as a homemade gift, keep it refrigerated and include storage instructions for the recipient.

Must be 21 years of age or older to purchase or consume alcoholic beverages. Please drink responsibly.
