Mediterranean Chickpea Salad Recipe

Ingredients

2 cans (15 ounces each) chickpeas, rinsed and drained
1 English cucumber, chopped into bite-sized pieces
½ red onion, finely diced
1 yellow bell pepper, diced
1 orange bell pepper, diced
½ cup Kalamata olives, halved
½ cup crumbled feta cheese
1 avocado, chopped
¼ cup chopped fresh basil and oregano
Salt, to taste
Freshly ground black pepper, to taste

Lemon Dijon Dressing

¼ cup extra virgin olive oil
¼ cup fresh lemon juice
½ teaspoon Dijon mustard
1 garlic clove, crushed
½ teaspoon sea salt
¼ teaspoon freshly ground black pepper

Preparation

Step 1: Prepare the Lemon Dressing

In a small bowl, measuring cup, or mason jar, combine the extra virgin olive oil, fresh lemon juice, Dijon mustard, crushed garlic, sea salt, and black pepper. Whisk thoroughly, or seal the jar and shake vigorously until the dressing is smooth and well emulsified.

Step 2: Assemble the Salad

Place the rinsed and drained chickpeas into a large serving bowl. Add the chopped cucumber, diced red onion, yellow bell pepper, orange bell pepper, Kalamata olives, crumbled feta cheese, avocado, and the fresh basil and oregano.

Step 3: Toss Everything Together

Pour the prepared dressing evenly over the salad ingredients. Gently toss until the vegetables and chickpeas are evenly coated while taking care not to mash the avocado.

Step 4: Chill and Serve

For the freshest Mediterranean flavor, refrigerate the salad for 20 to 30 minutes before serving. This allows the dressing to soak into the vegetables and chickpeas for an even more flavorful dish. Toss gently once more before serving.

Notes

Rinse and drain the canned chickpeas thoroughly to remove excess sodium and improve their texture.

Allowing the salad to chill before serving enhances the overall flavor as the dressing has time to blend with the fresh ingredients.

Fresh herbs such as parsley, basil, or oregano provide the brightest flavor. Feel free to adjust the herb combination based on what is available in your garden.

For a brighter citrus finish, squeeze an additional splash of fresh lemon juice over the salad just before serving.

Store leftovers in an airtight container in the refrigerator for up to 3 days. For the best texture, add freshly diced avocado just before serving if preparing the salad in advance.

This salad pairs beautifully with grilled chicken, seafood, lamb, or warm gluten-free pita bread for a complete Mediterranean-inspired meal.
