Preheat the oven to 350°F. Place 12 green cupcake liners in a standard muffin pan and set the pan aside.

For Option 1, whisk together the sweet rice flour, white rice flour, tapioca flour, brown rice flour, xanthan gum, baking powder, baking soda, and kosher salt in a medium bowl.
In a separate large bowl, beat the softened butter and granulated sugar for 3 to 4 minutes, or until pale and fluffy. If using oil, whisk the oil and sugar together until smooth.
Add the eggs one at a time, mixing well after each addition. Add the vanilla extract, watermelon extract, strained watermelon puree, sour cream, milk or buttermilk, and optional food coloring. Mix until evenly combined.
Gradually add the dry ingredients to the wet ingredients. Mix only until the batter is smooth and no dry streaks remain.

Beat on low speed for 30 seconds. Increase the mixer to medium speed and beat for 2 minutes, or until the batter is smooth.
𝗦𝘁𝗲𝗽 𝟱: 𝗙𝗶𝗹𝗹 𝘁𝗵𝗲 𝗖𝘂𝗽𝗰𝗮𝗸𝗲 𝗟𝗶𝗻𝗲𝗿𝘀
Divide the selected batter evenly among the prepared cupcake liners. Fill each liner approximately two-thirds full.
𝗦𝘁𝗲𝗽 𝟲: 𝗕𝗮𝗸𝗲 𝗮𝗻𝗱 𝗖𝗼𝗼𝗹 𝘁𝗵𝗲 𝗖𝘂𝗽𝗰𝗮𝗸𝗲𝘀
Bake the cupcakes for 18 to 22 minutes, or until the tops spring back when lightly touched and a toothpick inserted into the center comes out clean or with a few moist crumbs.
Allow the cupcakes to cool in the pan for 5 minutes. Transfer them to a wire cooling rack and let them cool completely before frosting.

Place approximately ½ cup strained watermelon puree in a small saucepan over medium heat. Bring it to a gentle simmer and cook, stirring occasionally, until it has reduced to approximately 3 tablespoons.
Transfer the reduced puree to a small bowl and allow it to cool completely before adding it to the buttercream.

Beat the softened butter for 2 to 3 minutes, or until smooth and creamy. Gradually add the powdered sugar and mix on low speed until combined.
Add the cooled watermelon reduction, watermelon extract, vanilla extract, kosher salt, and optional pink food coloring. Beat on medium-high speed for 4 to 5 minutes, or until the frosting is light and fluffy.
If the buttercream is too thick, add the heavy cream 1 tablespoon at a time until it reaches the desired consistency.
