1 pound sirloin steak or New York strip steak
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
1 tablespoon butter
2 large sweet onions, thinly sliced
1 teaspoon brown sugar
1 teaspoon balsamic vinegar
1 cup shredded whole milk mozzarella cheese
½ cup shredded provolone cheese
⅓ cup crumbled blue cheese
1 tablespoon grated Parmesan cheese
1 teaspoon chopped fresh thyme
Fresh parsley, chopped, for garnish (optional)

Directions

Step 1: Caramelize the Onions

Heat the butter in a large skillet over medium-low heat. Add the sliced onions and cook slowly, stirring often, for about 20 minutes until they become soft and golden brown. Stir in the brown sugar and balsamic vinegar and continue cooking for 2 to 3 minutes. Remove from the heat.
