3 tablespoons liquid egg whites from approximately 1 1/2 large eggs, at room temperature
1/8 teaspoon cream of tartar
1/8 teaspoon kosher salt or a small pinch of table salt
1/2 cup granulated sugar

For Peppermint Meringue Cookies

1/8 teaspoon peppermint extract
Red gel food coloring, optional

For Passionfruit Meringue Cookies

1 1/2 tablespoons strained passionfruit pulp

Directions

Step 1: Measure the Egg Whites

Separate 2 large eggs while they are cold, taking care not to get any yolk in the whites. Measure 3 tablespoons of egg white for the recipe. Reserve the remaining egg white for another use.

Allow the measured egg whites to reach room temperature before preparing the meringue.

Step 2: Preheat the Oven

Preheat the oven to 250°F. Line a rimmed baking sheet with parchment paper and set it aside.

Step 3: Prepare the Piping Bag

Fit a piping bag with an open star tip.

If making peppermint meringue cookies with red stripes, use a clean food-safe brush to paint a few thin stripes of red gel food coloring along the inside of the piping bag.

If making passionfruit meringue cookies, prepare a clean piping bag without the red food coloring.

Step 4: Whip the Egg Whites

Place the room-temperature egg whites in a small, clean, dry mixing bowl. 

Beat with an electric hand mixer until the egg whites become frothy, about 1 minute.

A hand mixer and small bowl are recommended for this half batch because the small amount of egg white may not reach the whisk properly in a large stand-mixer bowl.

Step 5: Add the Cream of Tartar and Salt

With the mixer running, add the cream of tartar and salt. Continue mixing for about 10 seconds, or until incorporated.

Step 6: Add the Sugar Gradually

Keep the mixer on low speed and slowly add approximately one-quarter of the granulated sugar. Increase the speed to medium, then gradually add the remaining sugar.

Adding the sugar slowly allows it to dissolve more evenly and helps create smooth, glossy homemade meringue cookies.

Step 7: Whip the Meringue to Firm Peaks

Continue beating until the meringue is thick and glossy and holds firm peaks when the beaters are lifted, about 10 minutes.

The peaks should remain upright without folding over. Continue whipping if necessary until the meringue reaches the proper consistency.

Step 8: Add the Selected Flavor

For peppermint meringue cookies, gently fold the peppermint extract into the meringue with a flexible spatula.

For passionfruit meringue cookies, gently fold the strained passionfruit pulp into the meringue.

Prepare only one flavor variation per batch. Do not combine the peppermint extract and passionfruit pulp.

Step 9: Fill the Piping Bag

Transfer the flavored meringue to the prepared piping bag. Twist the top of the bag closed to keep the meringue secure while piping.

Step 10: Pipe the Meringue Cookies

Pipe small swirls onto the parchment-lined baking sheet. Keep the cookies approximately the same size so they bake evenly, leaving a small amount of space between each one.

Step 11: Bake Until Crisp and Dry

Bake the meringue cookies for about 2 hours, or until they feel dry and release easily from the parchment paper.

Step 12: Cool the Cookies Gradually

Turn off the oven and leave the baking sheet inside with the oven door closed for 30 minutes.

Open the oven door slightly and allow the cookies to cool completely inside the oven for another 30 minutes. Gradual cooling helps the meringues develop their crisp, delicate texture.

This is a half batch of the original recipe and makes approximately 36 small meringue cookies.

Measuring 3 tablespoons of egg white is more accurate than trying to divide an egg visually. Separate the eggs individually before measuring so a broken yolk does not contaminate the entire amount.

Use a small mixing bowl and an electric hand mixer for this half batch. A large stand-mixer bowl may be too wide for the whisk to reach the small quantity of egg whites effectively.

Prepare one flavor per batch. Use the peppermint extract and optional red gel food coloring for peppermint meringues, or use the strained passionfruit pulp for passionfruit meringues.

Use a completely clean and dry bowl, beaters, spatula, and piping equipment. Even a small amount of grease, moisture, or egg yolk can prevent the egg whites from whipping properly.
