3/4 cup cucumber, seeded and sliced

2 tablespoons minced red onion

Step 1: Prepare the Lemon and Herbs

Wash and dry the lemon, dill, and parsley. Finely mince the lemon zest and fresh herbs. Mince the garlic into very small pieces so its flavor blends evenly into the vinaigrette.

Step 2: Make the Fresh Herby Vinaigrette

Add the lemon zest, lemon juice, dill, parsley, olive oil, garlic, Dijon mustard, salt, and black pepper to a small bowl. Whisk vigorously until thoroughly combined and slightly emulsified. Taste and adjust the salt or black pepper as needed.

Notes
