Ingredients

For the Fresh Mint Ice Cream

1 cup cold heavy whipping cream
1/2 cup packed fresh mint leaves
1/3 of a 14-ounce can sweetened condensed milk
Small pinch of salt

For the Chocolate Ice Cream

1 cup cold heavy whipping cream
1/3 of a 14-ounce can sweetened condensed milk
1/4 cup unsweetened cocoa powder
2 tablespoons miniature chocolate chips
Small pinch of salt

For the Cherry Ice Cream

1 cup cold heavy whipping cream
1/3 of a 14-ounce can sweetened condensed milk
1/3 cup thick cherry preserves
1 tablespoon maraschino cherry juice
1/2 cup chopped maraschino cherries, thoroughly drained and dried
Small pinch of salt

Directions

Step 1: Infuse the Cream With Fresh Mint

Place 1 cup of heavy whipping cream and the fresh mint leaves in a small saucepan. Warm over medium-low heat until the cream begins steaming around the edges. Do not allow the cream to boil.

Remove the saucepan from the heat, cover it, and allow the mint to steep for 30 minutes.

Step 2: Chill the Mint Cream

Pour the infused cream through a fine-mesh strainer into a covered container. Gently press the mint leaves to release the cream, then discard the leaves.

Refrigerate the mint-infused cream for at least 2 hours, or until completely cold.

Step 3: Prepare the Freezer Container

Line a 9 x 5-inch loaf pan with parchment paper or prepare a 2-quart freezer-safe container with a tight-fitting lid. Place the container in the freezer while preparing the ice cream.

Step 4: Make the Chocolate Ice Cream

Place one-third of the sweetened condensed milk in a medium bowl. Sift in the cocoa powder, add a small pinch of salt, and whisk until smooth.

In a separate chilled bowl, beat 1 cup of cold heavy whipping cream until stiff peaks form. Fold the whipped cream into the chocolate mixture in two additions. Gently fold in the miniature chocolate chips.

Step 5: Make the Cherry Ice Cream

Place one-third of the sweetened condensed milk in another medium bowl. Add the cherry preserves, maraschino cherry juice, and a small pinch of salt. Stir until evenly combined.

In a separate chilled bowl, beat 1 cup of cold heavy whipping cream until stiff peaks form. Fold the whipped cream into the cherry mixture in two additions. Gently fold in the drained and dried chopped cherries.

Step 6: Make the Fresh Mint Ice Cream

Place the remaining sweetened condensed milk in a third medium bowl and add a small pinch of salt.

Beat the chilled mint-infused cream until stiff peaks form. Gently fold it into the sweetened condensed milk in two additions.

Step 7: Combine the Flavors

Remove the prepared container from the freezer. Add alternating 

spoonfuls of chocolate, cherry, and fresh mint ice cream throughout the container.

Continue adding the mixtures in a scattered pattern until all three have been used. Do not arrange the flavors in separate layers.

Step 8: Swirl the Ice Cream

Run a butter knife or thin spatula through the ice cream two or three times using a gentle figure-eight motion. Reach down to the bottom of the container so the flavors are lightly swirled throughout.

Do not overmix. The chocolate, cherry, and fresh mint flavors should remain distinct and visible.

Step 9: Freeze the Ice Cream

Smooth the surface and press a piece of parchment paper or plastic wrap directly against the ice cream. Cover the container tightly.

Freeze for at least 8 hours, preferably overnight, or until firm and scoopable.

Step 10: Serve

Let the spumoni ice cream stand at room temperature for 5 to 10 minutes before serving. Scoop deeply into the container to capture the chocolate, cherry, and fresh mint flavors in each serving.
