Sweet, chewy, and naturally concentrated in flavor, oven-dried figs are an easy way to preserve fresh figs and enjoy them long after the harvest season. These homemade dried figs make a delicious snack, charcuterie board addition, or ingredient for baking, salads, and breakfast dishes.

Fresh, ripe figs
Optional: 1 tablespoon lemon juice
Directions
Step 1: Prepare the Figs
Select ripe figs that are soft to the touch but still hold their shape. Avoid figs that are overly mushy or bruised.
Wash the figs gently under cool running water and pat them completely dry with a clean kitchen towel or paper towels.
Step 2: Slice the Figs
Remove the stems from each fig using a sharp knife. Cut the figs in half lengthwise to expose the centers.
If desired, lightly brush the cut surfaces with lemon juice to help preserve their color during the drying process.
Step 3: Arrange for Drying
Line a baking sheet with parchment paper and place a wire rack on top. Arrange the fig halves cut-side up in a single layer on the rack, leaving a small amount of space between each piece to promote even airflow.
Step 4: Dry the Figs
Preheat your oven to 170°F.
Place the baking sheet in the oven and dry the figs for 6 to 12 hours, depending on their size, ripeness, and moisture content. Rotate the baking sheet every 2 to 3 hours to ensure even drying.
Step 5: Check for Doneness
Begin checking the figs after 6 hours. Properly dried figs should feel leathery, pliable, and slightly sticky, with no visible moisture remaining on the surface or inside the fruit.
Larger or juicier figs may require additional drying time.
Step 6: Cool and Store
Remove the figs from the oven and allow them to cool completely at room temperature.
Transfer the cooled figs to an airtight container and store them in a cool, dry place. For longer storage, refrigerate or freeze them.
Notes
Drying times can vary significantly depending on the size and variety of figs.
For extra flavor, sprinkle the figs lightly with cinnamon before drying.
If condensation appears inside the storage container, return the figs to the oven for additional drying time.
