Preparation
Step 1: Prepare the Pineapple
Remove the top and bottom of the pineapple. Stand it upright on a cutting board and carefully slice away the outer skin. Use a paring knife to remove any remaining eyes. Cut the pineapple into uniform ¼-inch slices or 1-inch chunks to promote even drying.
Step 2: Season the Pineapple
In a medium bowl, combine the smoked sea salt, chipotle powder, smoked paprika, and lime zest if using. Add the pineapple pieces and gently toss until each piece is evenly coated with the seasoning mixture.
Step 3: Preheat the Oven
Preheat your oven to its lowest setting, ideally 175°F. Low-temperature drying slowly removes moisture while concentrating the pineapple’s natural sweetness.
Step 4: Arrange on Baking Sheets
