Ingredients

For the Champagne Gelatin Layer

3 1/2 teaspoons unflavored gelatin
1/4 cup champagne or sparkling cider
2 1/4 cups champagne or sparkling cider, divided
1/2 cup granulated sugar
1 teaspoon fresh lemon juice

For the Vanilla Cream Layer

2/3 cup whole milk
1/3 cup heavy cream
2 1/2 teaspoons unflavored gelatin
1/4 cup honey
Pinch of kosher salt
1 teaspoon pure vanilla extract
3/4 cup heavy whipping cream

For the Whipped Cream Topping

1 cup heavy whipping cream
1/4 cup powdered sugar
Gold sprinkles for garnish, optional

Directions

Step 1: Bloom the Gelatin

In a small bowl, combine the unflavored gelatin with 1/4 cup champagne or sparkling cider. Stir gently and allow the gelatin to bloom for 5 minutes.

Step 2: Heat the Champagne Mixture

In a medium saucepan, combine the granulated sugar with the remaining 2 cups champagne or sparkling cider. Heat over medium-low heat until the mixture is hot and begins to steam. Do not allow it to boil.

Step 3: Finish the Champagne Gelatin

Whisk the bloomed gelatin into the warm champagne mixture. Continue stirring until the gelatin and sugar have completely dissolved.

Remove the saucepan from the heat and stir in the fresh lemon juice. 

Allow the mixture to cool for approximately 10 minutes.

Step 4: Chill the Champagne Layer

Carefully divide the champagne gelatin mixture among six coupe glasses or individual dessert dishes.

Transfer the glasses to the refrigerator and chill until the gelatin is completely set, at least 2 hours or overnight.

Step 5: Prepare the Vanilla Cream Base

In a measuring cup, whisk together the whole milk and 1/3 cup heavy cream.

Pour 1/4 cup of the milk mixture into a small bowl. Sprinkle the gelatin evenly over the surface and allow it to bloom for 5 minutes.

Step 6: Heat the Vanilla Cream Mixture

Place the remaining milk mixture, honey, and kosher salt in a medium saucepan. Heat over medium-low heat until the mixture is steaming.

Add the bloomed gelatin and whisk until it has fully dissolved. Do not allow the mixture to boil.

Step 7: Finish the Vanilla Cream

Remove the saucepan from the heat. Whisk in the vanilla extract and 3/4 cup heavy whipping cream.

Allow the vanilla cream mixture to cool until it is just warm to the touch, approximately 15 minutes. It should not be hot when poured over the set champagne gelatin.

Step 8: Add the Vanilla Cream Layer

Slowly and gently pour the cooled vanilla cream mixture over the chilled champagne gelatin.

Return the glasses to the refrigerator and chill until the vanilla cream layer is fully set, at least 3 hours or overnight.

Step 9: Make the Whipped Cream

Just before serving, place 1 cup heavy whipping cream and the powdered sugar in the bowl of a stand mixer fitted with the whisk attachment.

Whip until medium-stiff peaks form, approximately 2 minutes. Avoid overwhipping so the cream remains smooth and fluffy.

Step 10: Garnish and Serve

Spoon or pipe the whipped cream over each chilled dessert. Garnish with gold sprinkles, if desired, and serve immediately.

Notes

For the best flavor, choose a champagne that you enjoy drinking. Brut champagne is an excellent choice because its crisp, dry profile balances the sweetness of the dessert without overpowering the delicate vanilla cream.

Avoid boiling the champagne mixture. Gentle heating is all that is needed to dissolve the sugar and gelatin while preserving more of the sparkling wine’s delicate flavor and aroma.

Heating champagne does not guarantee that all alcohol will be removed. Use sparkling cider when preparing an alcohol-free version.

Sparkling cider creates a festive, family-friendly dessert with the same elegant layered appearance.

Allow the vanilla cream mixture to cool until just warm before pouring it over the champagne gelatin. A hot mixture could soften or melt the first layer.

For clean and distinct layers, make sure the champagne gelatin is completely set before adding the vanilla cream.

Fresh raspberries, strawberries, blackberries, edible flowers, citrus zest, or white chocolate curls can be used instead of gold sprinkles.

Both gelatin layers can be prepared up to one day in advance. Add the whipped cream and garnish shortly before serving for the freshest presentation.

Cover and store the desserts in the refrigerator for up to 3 days. The whipped cream topping may gradually soften during storage.
