2 tablespoons olive oil
½ white onion, thinly sliced
2 garlic cloves, thinly sliced
½ teaspoon kosher salt, or to taste
4 corn tortillas
2 ounces Oaxaca cheese or fresh mozzarella, shredded (about ½ cup)
8 fresh squash blossoms, stems and stamens removed
Step 1: Caramelize the Onion and Garlic
Heat the olive oil in a large cast iron or heavy-bottomed skillet over medium heat. Add the sliced onion and garlic. Cook, stirring occasionally, for 10 to 12 minutes, or until the onions become soft, golden, and lightly caramelized. Season with the kosher salt. Transfer the onion mixture to a small bowl and carefully wipe the skillet clean.
Step 2: Toast the Tortilla
Return the skillet to medium-high heat. Place one corn tortilla into the dry skillet and cook for about 1 minute, or until lightly golden on the bottom but still flexible.
Step 3: Add the Filling
Flip the tortilla over. Sprinkle one-quarter of the shredded Oaxaca cheese over one half of the tortilla. Arrange two prepared squash blossoms over the cheese and top with one-quarter of the caramelized onion and garlic mixture.
Step 4: Fold and Cook
Fold the tortilla in half to form a half-moon shape. Gently press it with a spatula to help hold the filling together. Continue cooking for about 3 minutes, turning once or twice, until the tortilla becomes lightly crisp and golden while the cheese melts completely. Lower the heat if the tortilla begins to brown too quickly.
Step 5: Repeat and Serve
Transfer the finished quesadilla to a serving plate. Repeat the process with the remaining tortillas, cheese, squash blossoms, and onion mixture until all four quesadillas are prepared. Serve immediately while warm for the best flavor and texture.
Fresh squash blossoms are delicate and should be used as soon as possible after harvesting or purchasing. Store them in the refrigerator and rinse them gently just before preparing the recipe.
Oaxaca cheese provides the most authentic flavor and melts beautifully. Fresh mozzarella is an excellent substitute if Oaxaca cheese is unavailable.
