Gluten-Free Yellow Cake
½ cup plus 1 tablespoon sweet rice flour
½ cup white rice flour
½ cup plus 1 tablespoon tapioca flour
¼ cup brown rice flour
¾ teaspoon xanthan gum
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon kosher salt
½ cup unsalted butter, softened, or ½ cup neutral oil
1 cup granulated sugar
4 large eggs, separated
2 teaspoons pure vanilla extract
½ cup whole milk or buttermilk, room temperature
8 ounces sour cream, room temperature
Chantilly Frosting
1 stick unsalted butter, softened
16 ounces mascarpone cheese, softened
8 ounces cream cheese, softened
2½ to 3 cups confectioners’ sugar
⅛ teaspoon salt
1 cup heavy whipping cream
1 teaspoon almond extract, optional
Berry Syrup (Optional)
½ cup water
¼ cup granulated sugar
2 heaping tablespoons berry jam
1 heaping tablespoon apricot jam

Preparation
Make the Gluten-Free Cake
Preheat the oven to 350°F. Grease three 6-inch round cake pans and line the bottoms with parchment paper.
In a medium bowl, whisk together the sweet rice flour, white rice flour, brown rice flour, tapioca flour, xanthan gum, baking powder, baking soda, and salt.
In a separate clean bowl, beat the egg whites until soft peaks form. Set aside.
In a large mixing bowl, cream the butter and sugar until light and fluffy, about 3 minutes.
Add the egg yolks one at a time, mixing well after each addition. Stir in the vanilla extract.
Add the dry ingredients in three additions, alternating with the milk and sour cream. Mix just until combined.
Fold one-third of the whipped egg whites into the batter to lighten it. Gently fold in the remaining egg whites until fully incorporated.
Divide the batter evenly among the prepared pans and smooth the tops.
Bake for 29 to 33 minutes, or until a toothpick inserted into the center comes out clean and the tops spring back lightly when touched.
Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
Prepare the Chantilly Frosting
In a large bowl, beat the softened butter, mascarpone cheese, and cream cheese until smooth and creamy.
Gradually add the confectioners’ sugar and salt, beating until fully incorporated.
Mix in the almond extract if using.
In a separate bowl, whip the heavy cream until stiff peaks form.
Carefully fold the whipped cream into the mascarpone mixture until light, smooth, and fluffy.
Refrigerate until ready to use.
Prepare the Berry Syrup
Combine the water, sugar, berry jam, and apricot jam in a small saucepan.
Cook over medium heat until the sugar dissolves completely and the mixture becomes smooth.
Remove from the heat and allow the syrup to cool completely.
Assemble the Cake
Place the first cake layer on a serving plate or cake stand.
Brush lightly with berry syrup.
Spread a generous layer of Chantilly frosting over the cake and add a few fresh berries.
Repeat with the remaining cake layers.
Apply a thin crumb coat of frosting around the cake and refrigerate for 20 minutes.
Finish frosting the cake with the remaining Chantilly frosting.
