Gluten-Free Chocolate Rugelach Recipe

About the Recipe

Rich, buttery, flaky, and filled with sweet cinnamon-spiced chocolate, this Gluten-Free Chocolate Rugelach recipe brings a beloved bakery favorite into your gluten-free kitchen. These delicate pastries feature a tender cream cheese dough wrapped around a decadent chocolate filling, creating layers of flavor and texture in every bite. Whether you are preparing a holiday cookie platter, hosting a brunch gathering, or simply craving a special homemade treat, these gluten-free chocolate rugelach are sure to impress.

One of the best things about this recipe is its flexibility. It includes two delicious dough options. The first uses a custom gluten-free flour blend made with oat flour, sweet rice flour, cornstarch, and tapioca flour for a wonderfully tender and traditional texture. The second option uses a convenient Measure for Measure gluten-free flour blend, making it an excellent choice for busy bakers who want outstanding results with fewer ingredients.

Unlike many gluten-free pastries that can become dry or crumbly, these rugelach remain soft, flaky, and rich thanks to the combination of butter and cream cheese. As they bake, the chocolate melts into the cinnamon-sugar filling, creating pockets of sweet indulgence throughout each spiral. A light brushing of milk and a sprinkle of sugar before baking add a beautiful golden finish and subtle crunch.

If you have never made rugelach before, do not be intimidated. The process is surprisingly simple, and the results are well worth the effort. Once you master this gluten-free version, it may become one of your favorite holiday baking traditions.

Gluten-Free Chocolate Rugelach Recipe

Ingredients

Dough Option One: Homemade Gluten-Free Flour Blend

2 sticks unsalted butter, softened

8 ounces cream cheese, softened

½ cup oat flour

½ cup sweet rice flour

½ cup cornstarch

½ cup tapioca flour

½ teaspoon xanthan gum

Dough Option Two: Measure for Measure Flour Version

Ingredients

2 sticks (16 tablespoons) unsalted butter, softened

6 ounces cream cheese, softened

⅓ cup sour cream

½ teaspoon salt

2 cups Measure for Measure gluten-free flour

Chocolate Cinnamon Filling

Ingredients

½ cup light brown sugar

1 tablespoon ground cinnamon

½ bag mini chocolate chips

Topping

2 tablespoons milk

2 tablespoons granulated sugar

Preparation

Make the Dough

For Dough Option One, place the softened butter and cream cheese into the bowl of a stand mixer fitted with the paddle attachment. Beat until smooth and creamy.

Add the oat flour, sweet rice flour, cornstarch, tapioca flour, and xanthan gum. Continue mixing until a soft, cohesive dough forms.

For Dough Option Two, beat together the butter, cream cheese, and sour cream until smooth and fluffy. Add the salt and Measure for Measure gluten-free flour. Mix until a soft dough comes together.

Divide either dough into three equal portions. Shape each portion into a flat disc. Wrap tightly in plastic wrap and refrigerate for at least 1 hour.

Chilling the dough is important because it firms the butter and cream cheese, making the dough easier to roll and helping create flaky layers during baking.

Prepare the Filling

While the dough chills, combine the brown sugar and cinnamon in a small bowl.

Measure the mini chocolate chips and set them aside.

The cinnamon enhances the chocolate flavor while adding warmth and depth, creating the classic flavor combination that makes rugelach so irresistible.

Roll the Dough

Preheat the oven to 350°F.

Line two baking sheets with parchment paper.

Remove one dough disc from the refrigerator. On a lightly floured surface, roll it into a rectangle approximately ¼ inch thick.

Evenly sprinkle one-third of the cinnamon-sugar mixture across the dough. Scatter one-third of the chocolate chips over the top.

Using a pizza cutter or sharp knife, cut the rectangle in half horizontally. Then cut vertically into eight equal strips. This will create small rectangular pieces that are easy to roll.

Starting from the short edge, gently roll each piece into a spiral shape.

Place each rugelach seam-side down on the prepared baking sheet.

Repeat with the remaining dough and filling.

Finish and Bake

Brush the tops of the rugelach with milk.

Sprinkle generously with granulated sugar.

Bake for 25 to 30 minutes, or until lightly golden brown and fragrant.

Allow the rugelach to cool on the baking sheet for 10 minutes before transferring them to a wire rack to cool completely.

The chocolate filling will remain slightly soft while warm but will set as the pastries cool.

Serving Suggestions

These gluten-free chocolate rugelach are wonderful served alongside coffee, espresso, tea, or hot chocolate. They make an elegant addition to dessert tables, cookie exchanges, holiday celebrations, and brunch menus.

For an extra-special presentation, drizzle cooled rugelach with melted dark chocolate or dust lightly with powdered sugar before serving.

Storage

Store cooled rugelach in an airtight container at room temperature for up to 3 days.

Refrigerate for up to 1 week.

To freeze, place completely cooled pastries in a freezer-safe container with parchment paper between layers. Freeze for up to 3 months. Thaw at room temperature before serving.

Variations

Add finely chopped walnuts, pecans, or hazelnuts to the filling for extra texture.

Mix orange zest into the cinnamon sugar for a bright citrus twist that pairs beautifully with chocolate.

Use dark chocolate, milk chocolate, or white chocolate chips depending on your preference.

For a festive holiday version, add a pinch of cardamom or nutmeg to the filling.

Notes

The homemade gluten-free flour blend creates an exceptionally delicate pastry with a traditional texture and flavor.

The Measure for Measure flour version is an excellent shortcut that still produces beautiful results.

If the dough becomes soft while rolling, return it to the refrigerator for 15 to 20 minutes before continuing.

Mini chocolate chips distribute more evenly throughout the dough and make rolling easier than regular-sized chips.

These gluten-free chocolate rugelach are perfect for holiday baking, special occasions, cookie trays, gift boxes, and year-round dessert enjoyment.
