Ingredients

Choose one complete ingredient option below. Do not combine the two formulas.

Option 1: Homemade Gluten-Free Flour Blend

1/2 cup plus 1 tablespoon sweet rice flour
1/2 cup white rice flour
1/2 cup plus 1 tablespoon tapioca flour
1/4 cup brown rice flour
3/4 teaspoon xanthan gum
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 stick unsalted butter, softened, or 1/2 cup oil
1 cup granulated sugar
2 teaspoons pure vanilla extract
8 ounces sour cream, at room temperature
4 large eggs
3 very ripe bananas, mashed
1/2 to 1 cup mini chocolate chips, optional

Option 2: All-Purpose Gluten-Free Flour

1 stick butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose gluten-free flour
1 teaspoon baking soda
1 teaspoon kosher salt
1 teaspoon xanthan gum, omitted if the flour blend already contains it
3 ripe bananas, mashed
1/2 cup sour cream

Directions

Step 1: Choose Your Batter and Prepare the Pan

Choose either the homemade gluten-free flour blend formula or the all-purpose gluten-free flour formula. Measure all ingredients from your selected option before mixing.

Preheat the oven to 350°F. For muffins, line muffin tins with paper liners. For banana bread, grease a 9 x 5-inch loaf pan.

Step 2: Combine the Dry Ingredients

For Option 1, whisk together the sweet rice flour, white rice flour, tapioca flour, brown rice flour, xanthan gum, baking powder, baking soda, and kosher salt.

For Option 2, whisk together the all-purpose gluten-free flour, baking soda, kosher salt, and xanthan gum. If the flour blend already contains xanthan gum, omit the additional teaspoon.

Whisk thoroughly so the leavening and xanthan gum are evenly distributed throughout the flour.

Step 3: Mix the Butter and Sugar

In a large mixing bowl, cream the softened butter and granulated sugar from your selected formula until light and fluffy.

If using the oil alternative in Option 1, beat the oil and sugar together until well combined. This mixture will not become fluffy in the same way as creamed butter and sugar.

Step 4: Add the Remaining Wet Ingredients

Add the eggs from your chosen formula one at a time, mixing well after each addition. Option 1 uses 4 eggs, while Option 2 uses 2 eggs.

Stir in the corresponding amount of vanilla extract, followed by the mashed bananas and sour cream. Mix until evenly combined. Small pieces of mashed banana may remain in the mixture.

Step 5: Finish the Batter

Gradually add the prepared dry ingredients to the wet ingredients. Mix just until combined, scraping the sides and bottom of the bowl as needed so no dry pockets remain.

Avoid prolonged mixing after the flour has been incorporated. If making Option 1 with mini chocolate chips, gently fold them into the finished batter.

Step 6: Bake as Muffins

For muffins, divide the batter among the prepared muffin cups, filling each approximately three-quarters full.

Bake for 18 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. If using chocolate chips, check a spot without a chip so melted chocolate does not obscure the result.

Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to continue cooling.

Step 7: Bake as Banana Bread

For banana bread, pour the batter into the prepared 9 x 5-inch loaf pan and spread the surface evenly.

Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean. Begin checking at 50 minutes and continue baking as needed.

Let the bread cool in the pan for 10 minutes before carefully transferring it to a wire rack. Allow it to cool further before slicing so the tender crumb has time to set.

Step 8: Serve

Serve the muffins slightly warm or at room temperature. Slice the banana bread once it has cooled enough to hold its shape.

These fluffy gluten-free banana muffins are flavorful on their own and make an easy addition to a breakfast spread, brunch table, or afternoon snack.

Notes

Choose one complete ingredient option. The two formulas use different amounts of eggs, sour cream, vanilla, salt, and leavening, so do not combine them or interchange individual quantities.

Use very ripe bananas with heavily brown-spotted peels for pronounced sweetness and banana flavor. Mash them before adding them to the batter.

Bring refrigerated ingredients to room temperature before mixing for a smoother, more evenly combined batter. The butter should be softened enough to cream with the sugar.

If your all-purpose gluten-free flour blend already contains xanthan gum, omit the additional teaspoon listed in that option.

The homemade gluten-free flour blend option allows 1/2 cup of oil in place of the stick of butter. The all-purpose gluten-free flour option uses butter.

Mix just until the dry ingredients are incorporated, scraping the bowl as needed to eliminate dry pockets.

Fill muffin cups approximately three-quarters full to allow room for rising. When making banana bread, avoid filling the loaf pan more than three-quarters full. Bake any excess batter separately as muffins. Yield will vary depending on the formula and portion size.

Mini chocolate chips are optional in the homemade flour blend version. Chopped walnuts, pecans, or cinnamon may also be added as optional variations.

Allow muffins to cool in the pan for 5 minutes and banana bread for 10 minutes before transferring to a wire rack. Let the bread cool further before slicing so the tender crumb has time to set.

Store completely cooled muffins or banana bread in an airtight container at room temperature for up to 3 days, or refrigerate for up to 1 week.

Freeze muffins or individually wrapped banana bread slices for up to 3 months. Thaw at room temperature before serving.

The listed total times cover preparation and baking. Allow additional time for cooling.
