Ingredients
For the Ice Cream Layer
Vegetable oil, for greasing
1 pint raspberry, passion fruit, or other fruit sorbet, softened
1 pint vanilla ice cream, softened
1 quart chocolate ice cream, softened and divided
1 cup gluten-free chocolate wafer crumbs
Gluten-free brownies, baked and cooled
For the Meringue Topping
1 cup egg whites (about 6 large eggs), room temperature
Pinch cream of tartar
1 cup granulated sugar
1 teaspoon pure vanilla extract
Pinch salt
Preparation
Make the Frozen Ice Cream Dome
Lightly coat a 3-quart metal bowl with vegetable oil and line it completely with plastic wrap, leaving extra overhang around the edges.
Fill the bowl with alternating scoops of fruit sorbet, vanilla ice cream, and half of the chocolate ice cream. Vary the size of the scoops as you build the layers to create a colorful marbled appearance throughout the dessert.
Place a sheet of plastic wrap directly on top and gently press down to remove air pockets and compact the layers. Remove the plastic wrap and evenly sprinkle the gluten-free chocolate wafer crumbs over the surface.
Cover again with plastic wrap and gently press the crumbs into place. Freeze for about 30 minutes, or until firm.
Remove the plastic wrap and spread the remaining chocolate ice cream evenly over the crumb layer. This creates a rich chocolate layer that helps bind the dessert together.
Cut the gluten-free brownies into ½-inch-thick slices and arrange them over the chocolate ice cream to completely cover the surface. Trim the brownies as needed for a snug fit.
Cover tightly with fresh plastic wrap and freeze for at least 2 hours or up to 2 days.
Prepare the Meringue
In a large mixing bowl, combine the egg whites and cream of tartar.
Using an electric mixer on medium speed, beat until frothy and foamy, about 2 minutes.
Gradually add the sugar while continuing to beat. Increase the speed to medium-high and continue mixing until the meringue becomes thick, glossy, and holds stiff peaks.
Add the vanilla extract and salt, mixing briefly until fully incorporated.
The finished meringue should be smooth, shiny, and able to stand upright when the beaters are lifted.
Assemble the Baked Alaska
Line a baking sheet with parchment paper.
Remove the frozen ice cream dome from the freezer and uncover the top. Carefully invert the bowl onto the prepared baking sheet.
Allow the bowl to sit briefly if needed until the frozen dessert releases naturally. Remove all plastic wrap.
Working quickly, spread the meringue over the entire surface of the frozen dome. Make sure every bit of ice cream is completely covered.
Use the back of a spoon to create decorative swirls, ridges, and peaks across the meringue. These textured areas will toast beautifully during baking.
Return the dessert to the freezer for at least 3 additional hours.
Toast the Meringue
Preheat the oven to 500°F.
Place the frozen Baked Alaska in the oven and bake for approximately 4 minutes, or until the peaks become golden brown.
For greater control, use a kitchen torch to toast the meringue until evenly browned and caramelized.
Serve and Enjoy
Allow the dessert to rest at room temperature for 5 to 10 minutes before slicing.
Use a sharp knife dipped in hot water for clean, beautiful slices that showcase the colorful layers inside.
Serve immediately and return any leftovers to the freezer.
Storage Tips
Store leftover Gluten-Free Baked Alaska in an airtight freezer-safe container for up to one week. While it will remain safe to eat longer, the best flavor and texture are enjoyed within the first few days.
