Ingredients
1½ pounds Brussels sprouts, trimmed and halved
⅓ cup olive oil
1½ tablespoons rice wine vinegar
3 tablespoons honey
2½ tablespoons gochujang paste
Salt, to taste
Freshly ground black pepper, to taste
Preparation
Prepare the Brussels Sprouts
Preheat the oven to 400°F.
Trim the ends from the Brussels sprouts and cut each sprout in half. Reserve any loose outer leaves, as they become extra crispy during roasting.
Make the Sweet and Spicy Gochujang Sauce
In a large mixing bowl, whisk together the olive oil, rice wine vinegar, honey, and gochujang paste until smooth and fully combined.
Add the Brussels sprouts and loose leaves to the bowl. Toss until evenly coated in the flavorful marinade.
Season with salt and freshly ground black pepper, then toss again to distribute the seasoning.
Roast Until Crispy
Line a large baking sheet with parchment paper.
Arrange the Brussels sprouts in a single layer, placing the cut sides down whenever possible. Spread the loose leaves around the pan to maximize crispiness.
Roast for 20 to 25 minutes, stirring once halfway through cooking. The Brussels sprouts should be deeply golden, crispy around the edges, and tender in the center.
Serve and Enjoy
Transfer the roasted Brussels sprouts to a serving platter and serve immediately while hot and crispy.
These honey gochujang Brussels sprouts make an excellent side dish for grilled meats, roasted salmon, rice bowls, noodle dishes, and Korean-inspired meals.
Notes
For the crispiest Brussels sprouts, avoid overcrowding the baking sheet. Use two baking sheets if needed.
Adjust the amount of gochujang according to your preferred spice level. Different brands vary in heat intensity.
For additional flavor, garnish with toasted sesame seeds and sliced green onions before serving.
Leftover Brussels sprouts can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a 375°F oven until warmed through and crispy.
These spicy roasted Brussels sprouts are naturally gluten-free when prepared with a certified gluten-free gochujang paste.
