2 bunches scallions, finely chopped

1-inch piece fresh ginger, grated

¼ cup brown sugar

For the Fish

1 whole sea bass or 4 sea bass fillets (about 1½ to 2 pounds)

Prepare the Tamari Ginger Sauce

In a medium saucepan, combine the tamari, chopped scallions, grated ginger, and brown sugar.

Place the saucepan over medium heat and stir frequently until the brown sugar completely dissolves. Allow the mixture to simmer gently for 3 to 5 minutes so the flavors can blend together.

Remove from the heat and set aside.

Prepare the Sea Bass

Preheat the oven to 400°F.
