Ingredients
21 large white mushrooms, stems removed and reserved
¼ cup extra-virgin olive oil, divided
Salt, to taste
Black pepper, to taste
1 small shallot, minced
2 garlic cloves, minced
¼ cup dry white wine
½ cup grated Parmesan cheese
1 teaspoon minced fresh thyme
1 teaspoon fresh lemon juice
Preparation
Step 1: Prepare the Oven and Mushrooms
Preheat the oven to 425°F. Position the oven rack in the center of the oven and line a rimmed baking sheet with parchment paper.
Place the mushroom caps in a large bowl. Toss them with 2 tablespoons of the olive oil until evenly coated. Season lightly with salt and black pepper.
Arrange the mushrooms gill side up on the prepared baking sheet.
Step 2: Roast the Mushroom Caps
Roast the mushroom caps for 20 minutes, or until they begin releasing their natural juices.
Carefully flip each mushroom over and continue roasting for an additional 10 minutes until the mushrooms are tender and lightly browned.
Remove them from the oven and set aside while preparing the filling.
Step 3: Make the Mushroom Filling
Place the reserved mushroom stems, shallot, garlic, and a pinch of black pepper into a food processor.
Pulse 10 to 14 times until the mixture is finely chopped but not pureed.
Heat the remaining olive oil in a medium nonstick skillet over medium heat.
Add the mushroom mixture and cook for about 5 minutes, stirring frequently, until the moisture has evaporated and the mixture becomes lightly browned.
Pour in the white wine and continue cooking for about 1 minute, allowing most of the liquid to evaporate.
Remove the skillet from the heat and allow the mixture to cool for approximately 5 minutes.
Stir in the grated Parmesan cheese, fresh thyme, and lemon juice until thoroughly combined.
Step 4: Fill the Mushrooms
Turn the roasted mushroom caps so the gill side is facing upward.
Season the inside of each mushroom lightly with salt and pepper.
Evenly divide the filling among the mushroom caps, gently pressing it into place.
Step 5: Bake and Serve
Return the stuffed mushrooms to the oven.
Bake for 5 to 7 minutes, or until the filling is heated through and the cheese has melted slightly.
Serve warm.
