Ingredients
For the Cookie Dough
2 cups sharp cheddar cheese, freshly grated
½ cup cornmeal
½ cup masa harina
6 tablespoons cold unsalted butter, chopped
1 large egg
½ teaspoon freshly ground black pepper
⅛ teaspoon cayenne pepper
For the Sun-Dried Tomato Filling
1 cup sun-dried tomatoes, finely minced
1 garlic clove, finely chopped
2 tablespoons extra-virgin olive oil
Preparation
Prepare the Oven and Baking Sheets
Preheat the oven to 400°F.
Line two baking sheets with parchment paper or silicone baking mats to prevent sticking and ensure easy cleanup.
Make the Sun-Dried Tomato Filling
In a small bowl, combine the minced sun-dried tomatoes, chopped garlic, and olive oil. Stir until the mixture is evenly coated and well combined. Set aside while preparing the dough. Allowing the mixture to rest helps the flavors blend together.
Prepare the Cookie Dough
Add the grated cheddar cheese, cornmeal, masa harina, cold butter, egg, black pepper, and cayenne pepper to the bowl of a food processor fitted with a steel blade.
Process the ingredients until the mixture comes together and forms a soft dough ball. The dough should be slightly firm but easy to handle.
If the dough appears too soft, refrigerate it for 10 to 15 minutes before shaping.
Shape the Cookies
Using your hands or a small cookie scoop, roll the dough into 1½-inch balls. Arrange them on the prepared baking sheets, leaving approximately 1 inch of space between each cookie.
The dough will not spread much during baking, but proper spacing allows for even cooking.
First Bake
Bake the cookies for 5 minutes.
Remove the baking sheets from the oven while keeping the oven temperature at 400°F.
Create the Thumbprints
Carefully press your thumb or the back of a measuring spoon into the center of each cookie to create a small indentation.
Fill each indentation with about 1 teaspoon of the prepared sun-dried tomato mixture.
The filling should sit neatly inside the well without overflowing.
Finish Baking
Return the cookies to the oven and bake for an additional 5 to 7 minutes, or until the cookies are firm and lightly golden around the edges.
The cheddar cheese will create a beautiful golden crust while the filling becomes warm and aromatic.
Serve
Allow the cookies to cool on the baking sheet for several minutes before transferring them to a serving platter.
Serve warm for the best flavor, or allow them to cool completely and enjoy at room temperature.
Notes
Masa harina adds a subtle corn flavor and tender texture that complements the cheddar cheese beautifully.
For extra flavor, add 1 tablespoon finely chopped fresh basil or parsley to the sun-dried tomato filling.
Sharp cheddar provides the boldest flavor, but aged white cheddar or smoked cheddar can also be used.
These savory thumbprint cookies can be made up to one day in advance and stored in an airtight container at room temperature.
For entertaining, pair these cheesy appetizer cookies with charcuterie boards, soups, salads, or wine tastings.
If using oil-packed sun-dried tomatoes, drain them well before mincing to prevent the filling from becoming overly oily.
