½ cup extra-virgin olive oil

⅓ cup fresh lime juice

⅓ cup white wine vinegar or white vinegar

4 cloves garlic, minced

1 tablespoon agave nectar, plus more to taste

1 (7-ounce) can chipotle peppers in adobo sauce

½ of the remaining adobo sauce from the can

1 dash kosher salt, or to taste

Preparation

Prepare the Chipotle Peppers

Remove the chipotle peppers from the can and reserve the remaining adobo sauce. If desired, remove the seeds from the peppers for a milder flavor.
