Preparation
Step 1: Prepare the Custard Base
Place the egg yolks and granulated sugar into a medium heatproof bowl or a heavy-bottomed saucepan. Whisk continuously for about 1 minute until the mixture becomes pale in color and slightly thickened. This creates the smooth foundation for the zabaglione.
Step 2: Add the Wine
Pour the Marsala wine or Champagne into the egg mixture. Add the pinch of salt and whisk until everything is fully combined and smooth.
Step 3: Cook the Zabaglione
Place the bowl over a saucepan filled with barely simmering water, making sure the bottom of the bowl does not touch the water. If using a saucepan, cook over very low heat. Whisk constantly and vigorously for 5 to 7 minutes. As air is incorporated into the mixture, it will gradually become lighter, thicker, and glossy.
If the mixture begins to heat too quickly, immediately remove it from the heat while continuing to whisk. Once the temperature has lowered slightly, return it to the heat and continue whisking until finished.
Step 4: Check for Doneness
Continue whisking until the zabaglione has nearly tripled in volume and forms soft ribbons when the whisk is lifted. The custard should reach approximately 160°F and have a silky, airy consistency without becoming overly thick.
Step 5: Serve Immediately
Spoon the warm zabaglione into serving glasses or dessert bowls. Serve it immediately over fresh strawberries, raspberries, blueberries, sliced peaches, figs, pound cake, angel food cake, sponge cake, or crisp biscotti.
