2 teaspoons granulated sugar

1½ teaspoons xanthan gum

1 cup cold salted butter, diced

3 large eggs

Option 2: Gluten-Free All-Purpose Flour Pie Crust

1¼ cups gluten-free all-purpose flour

1 tablespoon granulated sugar

½ teaspoon xanthan gum

½ teaspoon salt

6 tablespoons cold butter, cut into small cubes

1 large egg

2 teaspoons lemon juice or vinegar

For an egg-free crust, substitute 4 tablespoons cold water for the egg and lemon juice mixture. Add additional cold water if needed.

Peach Bourbon Filling

3 cups sliced fresh peaches, about 3 small peaches

¼ cup brown sugar

2 ounces bourbon

½ cup chopped pecans

Egg Wash

1 large egg, beaten

Preparation

Prepare Option 1: Gluten-Free Flour Blend Crust

In a large bowl, whisk together the tapioca flour, cornstarch, brown rice flour, oat flour, granulated sugar, sea salt, and xanthan gum.

Add the cold diced butter and work it into the flour mixture using a pastry cutter or your fingertips until the mixture resembles coarse crumbs with pea-sized pieces of butter remaining.

Beat the eggs in a separate bowl until frothy. Gradually stir the eggs into the flour mixture until a dough forms. If necessary, add 1 to 3 tablespoons of cold water until the dough comes together.

Shape the dough into a disk, wrap tightly, and refrigerate for at least 1 hour or overnight.

Prepare Option 2: Gluten-Free All-Purpose Flour Crust

In a large bowl, whisk together the gluten-free all-purpose flour, sugar, xanthan gum, and salt.

Prepare the Bourbon Peach Filling
