If you chose the individual-flour crust, whisk together the tapioca flour, cornstarch, brown rice flour, oat flour, granulated sugar, sea salt, and xanthan gum in a large mixing bowl.
Add the cold diced butter. Use a pastry cutter or your fingertips to work the butter into the flour mixture until it resembles coarse crumbs with some pea-sized pieces of butter remaining.
Beat the eggs in a separate bowl until frothy. Gradually stir them into the flour mixture until a dough forms. If the mixture is too dry to hold together, add 1 tablespoon of cold water at a time, using no more than 3 tablespoons.

Step 2: Prepare Option 2, the All-Purpose Flour Crust
If you chose the gluten-free all-purpose flour crust, whisk together the gluten-free all-purpose flour, granulated sugar, xanthan gum, and salt in a large mixing bowl.
Cut the cold butter into the dry ingredients until the mixture resembles coarse crumbs with small pieces of butter remaining.
Whisk the egg and lemon juice or vinegar together in a separate bowl until frothy. Add the mixture to the dry ingredients and stir until a dough forms. If necessary, add cold water 1 tablespoon at a time just until the dough holds together.
Shape the dough into a disk, wrap it tightly, and refrigerate it for at least 1 hour. Continue with Step 3.
Step 3: Make the Bourbon Brown Sugar Syrup
Combine the brown sugar and bourbon in a small saucepan over medium heat.
Cook while stirring constantly until the brown sugar dissolves and the mixture forms a smooth syrup. Remove the saucepan from the heat and let the syrup cool slightly.
Step 4: Combine the Peaches and Pecans
Place the sliced peaches and chopped pecans in a large bowl. Gently toss until evenly combined.
Step 5: Prepare the Oven
Position an oven rack in the center of the oven and preheat the oven to 375°F. Line a large baking sheet with parchment paper.
