2 pounds baby potatoes, halved or quartered if large

2 tablespoons za’atar seasoning
1 teaspoon garlic powder
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 tablespoon fresh lemon juice
1 tablespoon chopped fresh parsley, optional for garnish

Directions

Step 1: Prepare the Oven

Preheat the oven to 400°F. Line a large rimmed baking sheet with parchment paper or lightly coat it with olive oil.

Step 2: Prepare the Potatoes

Rinse the baby potatoes thoroughly under cool running water. Pat them completely dry with a clean kitchen towel or paper towels. Cut the potatoes into evenly sized halves or quarters so they roast at the same rate.

Step 3: Season the Potatoes

Place the potatoes in a large mixing bowl. Add the extra virgin olive oil, za’atar seasoning, garlic powder, kosher salt, and black pepper. Toss until every piece is evenly coated.

Step 4: Arrange the Potatoes

Spread the seasoned potatoes on the prepared baking sheet in a single layer. Position the cut sides facing downward whenever possible. Leave space between the pieces so the potatoes roast and brown instead of steaming.

Step 5: Roast Until Crispy

Notes

Dry the potatoes thoroughly before seasoning them. Excess moisture can prevent the edges from becoming crisp.

Choose potatoes of a similar size and cut them into uniform pieces to promote even cooking.

Do not overcrowd the baking sheet. Divide the potatoes between two baking sheets if necessary.

Place the cut sides of the potatoes against the baking sheet whenever possible to encourage deeper browning and crispier edges.

Za’atar blends vary in their proportions of herbs, sumac, sesame seeds, and salt. Taste the seasoning and adjust the kosher salt as needed.

Fresh minced garlic may be used in place of the garlic powder, but watch it carefully because it can burn during roasting.

For gentle heat, add a pinch of crushed red pepper flakes or Aleppo pepper.

For additional flavor, top the finished potatoes with crumbled feta, grated 

Parmesan, or toasted sesame seeds.
