Preparation

Step 1: Prepare the Oven

Preheat the oven to 350°F. Line two standard 12-cup muffin pans with cupcake liners.

Step 2: Mix the Dry Ingredients

In a medium bowl, whisk together the sweet rice flour, white rice flour, tapioca flour, brown rice flour, xanthan gum, baking powder, baking soda, and kosher salt until well combined.

Step 3: Cream the Butter and Sugar

In a large mixing bowl, beat the softened butter and granulated sugar for 3 to 4 minutes until light, fluffy, and pale in color.

Step 4: Add the Eggs and Vanilla

Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Step 5: Finish the Batter

Mix one-third of the flour mixture into the butter mixture.

Add half of the milk.

Mix in another third of the flour mixture.

Add the sour cream.

Finish with the remaining flour mixture, mixing only until incorporated.

Step 6: Fill the Cupcake Liners

Divide the batter evenly among the cupcake liners, filling each about two-thirds full.

Step 7: Bake the Cupcakes

Bake for 18 to 22 minutes, or until the tops spring back lightly and a toothpick inserted into the center comes out clean.

Allow the cupcakes to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Step 8: Prepare the Buttercream

Beat the butter until smooth and creamy.

Gradually add the powdered sugar.

Mix in the vanilla extract and kosher salt.

Slowly add the heavy cream until the frosting reaches a smooth piping consistency.

Continue beating for another 2 to 3 minutes until light and fluffy.

Step 9: Color the Frosting

Divide the frosting evenly into three bowls.

Leave one bowl white.

Color one bowl bright red using gel food coloring.

Color the remaining bowl bright blue using gel food coloring.

Place each color into its own piping bag, then insert all three bags into one large piping bag fitted with a large open star tip.

Step 10: Decorate the Cupcakes

Pipe generous swirls of red, white, and blue frosting onto each cooled cupcake.

Finish with patriotic sprinkles, edible silver stars, blue sanding sugar, red sanding sugar, or Captain America-themed cupcake toppers for an impressive superhero finish.

Notes

Store the cupcakes in an airtight container at room temperature for up to 3 days.

Refrigerate for up to 5 days. Bring to room temperature before serving for the softest texture.

Unfrosted cupcakes can be frozen for up to 3 months.

Gel food coloring creates vibrant patriotic colors without thinning the buttercream.

For bakery-quality frosting swirls, chill the filled piping bag for about 10 minutes before decorating.

These cupcakes are perfect for Fourth of July parties, Memorial Day celebrations, Veterans Day events, comic book parties, birthday celebrations, and superhero-themed gatherings.
