Yield
4 to 6 servings
Ingredients
⅓ bottle Japanese BBQ sauce, divided
1 teaspoon Szechuan peppercorns, finely ground
1 teaspoon garlic granules
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons honey
2 pounds chicken wings
Non-stick cooking spray
Preparation
Step 1: Prepare the Sauce
In a medium bowl, combine ⅓ bottle of Japanese BBQ sauce, ground Szechuan peppercorns, garlic granules, salt, black pepper, and honey. Stir until the mixture is smooth and well blended.
Reserve a small portion of the sauce for tossing the wings after baking.
Step 2: Preheat the Oven
Adjust the oven rack to the upper-middle position and preheat the oven to 425°F.
Line a large baking sheet with aluminum foil. Place a wire rack on top of the baking sheet and lightly coat the rack with non-stick cooking spray.
Step 3: Dry the Wings
Pat the chicken wings thoroughly dry using paper towels. Removing excess moisture helps create crispier skin during baking.
Place the wings in a large mixing bowl.
Step 4: Season the Wings
Brush or pour most of the prepared sauce mixture over the wings. Toss until each wing is evenly coated.
Arrange the wings in a single layer on the prepared wire rack with the skin side facing up.
Step 5: Bake Until Crispy
Bake the wings on the upper-middle oven rack for approximately 60 minutes, turning them every 20 minutes to ensure even browning and crispness.
The wings are ready when they are golden brown, crispy on the outside, and cooked through to an internal temperature of 165°F.
Step 6: Rest and Finish
Remove the wings from the oven and allow them to rest for 5 minutes.
Transfer the wings to a large bowl and toss with the reserved Japanese BBQ sauce mixture until evenly coated.
Step 7: Serve
Serve immediately while hot. These wings pair wonderfully with steamed rice, pickled vegetables, cucumber salad, or a fresh Asian-inspired slaw.
Notes
For extra crispy wings, allow the wings to sit uncovered in the refrigerator for 2 to 4 hours before baking.
Japanese BBQ sauces vary in sweetness and saltiness. Taste the sauce before coating the wings and adjust the honey or seasoning as needed.
Freshly ground Szechuan peppercorns provide the best flavor and subtle citrusy heat.
If you prefer a spicier wing, add ¼ teaspoon crushed red pepper flakes or a drizzle of chili oil to the sauce mixture.
Leftover wings can be stored in an airtight container in the refrigerator for up to 3 days and reheated in a 375°F oven until warmed through.
