3 medium sweet potatoes (about 1 pound total), scrubbed well and pricked all over with a fork
2 tablespoons canola oil
2 cups plain yellow cornmeal
¼ cup white rice flour
⅛ cup brown rice flour
1½ tablespoons tapioca starch
¼ cup plus ½ tablespoon potato starch
1 tablespoon baking powder
1 tablespoon fresh sage, finely minced
2 teaspoons kosher salt
¼ teaspoon baking soda
1½ cups buttermilk
½ cup unsalted butter, melted
2 large eggs

Roast the Sweet Potatoes
Preheat the oven to 400°F.
Place the sweet potatoes on a baking sheet and roast for about 1 hour, or until they are very tender when pierced with a knife.
Remove from the oven and allow them to cool until they can be handled comfortably.
Cut the sweet potatoes in half lengthwise and scoop out the flesh. Discard the skins and mash the sweet potato until completely smooth. Measure 1 cup of mashed sweet potato for the cornbread batter.
Prepare the Skillet
Increase the oven temperature to 425°F.
