Ingredients

1 bag baby red potatoes

1 bag Colby Jack cheese, shredded

1 package bacon bits

1 bunch fresh chives, finely chopped

Olive oil, for brushing

Salt, to taste

Black pepper, to taste

Preparation

Prepare the Potato Skins

Preheat the oven to 400°F. Line a large baking sheet with parchment paper.

Wash and dry the baby red potatoes thoroughly. Slice each potato in half lengthwise.

Using a melon baller or small spoon, carefully scoop out a portion of the flesh from each potato half, leaving a thin layer around the edges to create a sturdy potato skin.

Lightly brush the potato skins with olive oil and season with salt and black pepper.

Arrange the potato skins cut-side up on the prepared baking sheet.

Bake the Potato Skins

Bake for 45 minutes, or until the potato skins are golden brown and crispy around the edges.

Remove the baking sheet from the oven.

Add the Toppings

Fill each potato skin with shredded Colby Jack cheese and bacon bits.

Return the potato skins to the oven and bake for an additional 5 to 10 minutes, or until the cheese is melted and bubbly.

Remove from the oven and immediately sprinkle with fresh chopped chives.

Serve warm and enjoy.

Notes

For extra crispy potato skins, brush both the inside and outside of the potatoes with olive oil before baking.

The scooped-out potato flesh can be saved and used for mashed potatoes, potato soup, breakfast hash, or potato pancakes.
