1 tablespoon butter
1/2 large onion, finely diced, or 1 shallot, minced
8 ounces baby portobello mushrooms, sliced
1 clove garlic, minced
1 1/2 cups Arborio rice
1 carton vegetable stock, 32 ounces, warmed
3 teaspoons fresh lemon juice or lime juice
1/2 cup water
Salt, to taste
Ground black pepper, to taste
1/3 cup freshly grated Parmesan cheese
2 tablespoons finely chopped fresh chives
Directions
Step 1: Warm the Vegetable Stock
Pour the vegetable stock into a saucepan and warm it over low heat. Keep the stock warm throughout the cooking process.
Step 2: Sauté the Onion and Mushrooms
Melt the butter in a large saucepan or deep skillet over medium heat. Add the diced onion or minced shallot and cook for 3 to 4 minutes, stirring occasionally, until softened and translucent.
Add the sliced mushrooms and cook for 6 to 8 minutes, stirring occasionally.
Allow the mushrooms to release their moisture and begin to brown.
Step 3: Add the Garlic
Stir in the minced garlic and cook for approximately 30 seconds, or until fragrant. Do not allow the garlic to burn.
Step 4: Toast the Arborio Rice
Add the Arborio rice to the mushroom mixture. Cook for 1 to 2 minutes, stirring constantly, until the grains are evenly coated with butter and lightly toasted.
Step 5: Gradually Add the Stock
Add a small portion of the warm vegetable stock to the rice. Stir frequently and allow the rice to absorb most of the liquid before adding another portion.
Continue adding the warm stock gradually and stirring frequently after each addition. Cook for approximately 18 to 20 minutes, or until the rice is creamy and tender but still has a slight bite in the center. Depending on the rice and cooking temperature, you may not need all the stock.
Step 6: Add the Citrus Juice and Water
Stir in the lemon juice or lime juice and the water. Continue cooking briefly, stirring until the liquid is incorporated and the risotto has a creamy, spoonable consistency.
Season with salt and ground black pepper to taste.
Step 7: Stir in the Parmesan
Remove the pan from the heat. Add the freshly grated Parmesan cheese and stir until it has melted completely and the risotto is smooth, glossy, and creamy.
Step 8: Garnish and Serve
Spoon the risotto into serving bowls and garnish with the finely chopped fresh chives. Serve immediately while warm and creamy.
Notes
Always use warm vegetable stock when preparing risotto. Adding cold stock can interrupt the cooking process and prevent the rice from cooking evenly.
Arborio rice contains the starch needed to create risotto’s naturally creamy texture. Long-grain rice will not produce the same result.
Add the vegetable stock gradually, allowing most of each portion to absorb before adding more. The exact amount needed may vary depending on the rice and cooking temperature.
Stir the risotto frequently to encourage the rice to release its starch, but avoid stirring so aggressively that the grains begin to break apart.
Baby portobello mushrooms provide a rich, earthy flavor. Cremini, shiitake, white button mushrooms, or a combination may also be used.
