Ingredients

4 cups vegetable broth

2 tablespoons olive oil

4 tablespoons unsalted butter, divided

1 medium onion, finely minced

1 1/2 cups Arborio rice
1 cup dry white wine

6 ounces fresh baby spinach

1/2 cup oil-packed sun-dried tomatoes, drained and chopped

1 cup freshly grated Parmesan cheese

Directions

Step 1: Warm the Broth

Pour the vegetable broth into a medium saucepan. Heat it over low heat until hot but not boiling. Keep the broth warm throughout the cooking process so it does not lower the temperature of the rice.

Step 2: Cook the Aromatics

Heat the olive oil and 2 tablespoons of the butter in a large, heavy-bottomed skillet or Dutch oven over medium heat.

Add the minced onion and cook for about 5 minutes, stirring occasionally, until soft and translucent. Stir in the garlic and cook for approximately 30 seconds, just until fragrant.

Step 3: Toast the Arborio Rice

Remove the pan from the heat. Stir in the remaining 2 tablespoons of butter and the freshly grated Parmesan cheese until melted and fully incorporated. The finished risotto should be rich, creamy, and glossy.
