¼ cup olive oil
2 yellow onions, finely chopped
3 cloves garlic, minced
1½ teaspoons dried oregano
½ teaspoon red pepper flakes
1 cup vodka
2 (28-ounce) cans whole peeled plum tomatoes, drained
2 teaspoons salt
½ teaspoon freshly ground black pepper
2 tablespoons fresh oregano, chopped
1 cup heavy cream
½ cup freshly grated Parmesan cheese
Extra grated Parmesan cheese, for serving

Preparation
Step 1: Sauté the Onions
Heat the olive oil in a large Dutch oven over medium-low heat. Add the chopped onions and cook for about 5 minutes, stirring occasionally, until they become soft and translucent.
Step 2: Add the Aromatics
Stir in the minced garlic, dried oregano, and red pepper flakes. Cook for 1 minute, stirring constantly until the garlic becomes fragrant without browning.
Step 3: Reduce the Vodka
Pour the vodka into the pot and bring the mixture to a gentle simmer. Allow it to cook for 5 to 7 minutes, or until the liquid has reduced by about half. This cooks off most of the alcohol while concentrating the flavor.
Step 4: Add the Tomatoes
Using clean hands, gently crush each whole tomato directly into the pot. Add the remaining tomato juices along with the salt and black pepper. Stir everything together until well combined.
Step 5: Blend the Sauce
Simmer the sauce for about 10 minutes to allow the flavors to develop. Using an immersion blender, carefully puree the sauce until completely smooth. If using a blender or food processor, allow the sauce to cool slightly before blending in batches, then return it to the Dutch oven.
Step 6: Finish with Cream
Stir in the chopped fresh oregano and heavy cream. Reduce the heat to low and simmer partially covered for 10 minutes, stirring occasionally, until the sauce becomes silky and slightly thickened.
Step 7: Add the Parmesan
Remove the Dutch oven from the heat and stir in the freshly grated Parmesan cheese until completely melted and incorporated into the sauce.
Step 8: Serve
Serve the hot vodka pink sauce over your favorite cooked gluten-free pasta. Garnish with additional Parmesan cheese and fresh oregano for a beautiful finishing touch.

For an extra smooth texture, strain the blended sauce through a fine mesh sieve before adding the cream.

If you prefer a milder sauce, reduce or omit the red pepper flakes.
The vodka enhances the tomato flavor without making the sauce taste alcoholic, as most of the alcohol evaporates during cooking.
