Piccata Sauce Recipe (Lemon Caper Butter Sauce)

Ingredients

Salt and black pepper, to taste
1 cup sweet rice flour
2 tablespoons olive oil
2 tablespoons butter, divided
¾ cup dry white wine
1 tablespoon finely chopped shallot
2 garlic cloves, minced
2 tablespoons fresh lemon juice
1 tablespoon small capers, drained
Fresh parsley leaves or chopped fresh parsley, for garnish

Preparation

Step 1: Prepare the Meat or Seafood

Pat the chicken, fish, shrimp, scallops, or pork dry with paper towels. Season both sides generously with salt and black pepper.

Spread the sweet rice flour onto a shallow plate and lightly coat each piece, shaking off any excess flour.

Step 2: Brown the Meat or Seafood

Heat the olive oil and 1 tablespoon of the butter in a large skillet over medium heat until the butter has melted and begins to sizzle.

Add the floured meat or seafood to the skillet in a single layer. Cook until lightly golden and cooked through, about 2 to 3 minutes per side for thin fillets or adjust the cooking time as needed for thicker cuts.

Transfer the cooked meat or seafood to a serving platter and keep warm.

Step 3: Build the Piccata Sauce

Increase the heat to medium-high. Pour the white wine into the skillet, scraping up any browned bits from the bottom of the pan with a wooden spoon.

Add the chopped shallot and minced garlic. Cook for 1 to 2 minutes, stirring frequently, until the shallot has softened and the garlic is fragrant.

Step 4: Finish the Sauce

Stir in the fresh lemon juice and capers. Simmer for about 1 minute to allow the flavors to blend.

Remove the skillet from the heat and stir in the remaining tablespoon of butter until completely melted and the sauce becomes silky and glossy.

Step 5: Serve

Spoon the warm lemon caper butter sauce over the cooked meat or seafood. Garnish with fresh parsley and serve immediately.

Sweet rice flour creates a light coating that helps develop flavorful browned bits while keeping the sauce naturally gluten-free.

Use freshly squeezed lemon juice for the brightest flavor.

Dry white wines such as Sauvignon Blanc, Pinot Grigio, or Chardonnay work well in this sauce.
