Decadent Orange-Spiced Flourless Chocolate Cake Recipe

Make this Decadent Orange-Spiced Flourless Chocolate Cake Recipe with rich dark chocolate, fresh orange zest, and warm spices for an elegant, fudgy gluten-free dessert.

This Decadent Orange-Spiced Flourless Chocolate Cake Recipe combines rich dark chocolate, fresh orange zest, and warm spices to create an elegant gluten-free dessert with a delicate crust and a silky, fudgy center. The bright citrus flavor balances the richness of the chocolate, while cinnamon, ginger, and nutmeg add a subtle warmth that makes every bite delicious.

Unlike traditional chocolate cakes, this flourless chocolate cake relies on whipped egg whites for its delicate structure. Gently melting the chocolate and butter in a double boiler creates a smooth, glossy base, while careful folding helps maintain a beautifully tender texture.

Perfect for holidays, dinner parties, birthdays, or special occasions, this naturally gluten-free dessert is easy to prepare ahead of time. Serve it with freshly whipped cream, berries, or a light dusting of cocoa powder for an elegant presentation.

Total Time: 2 hours 50 minutes to 2 hours 55 minutes
Servings: 10 to 12 slices

Ingredients

8 ounces bittersweet or semisweet chocolate, finely chopped
1/2 cup unsalted butter, cut into pieces
3/4 cup granulated sugar, divided
5 large eggs, separated, at room temperature
1 teaspoon pure vanilla extract
1 tablespoon finely grated fresh orange zest
2 tablespoons fresh orange juice
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon ground nutmeg
1/4 teaspoon kosher salt
2 tablespoons unsweetened cocoa powder, plus additional for preparing the pan

Optional Garnishes

Unsweetened cocoa powder or confectioners’ sugar
Lightly sweetened whipped cream
Fresh raspberries or strawberries
Fresh orange slices or orange zest
Finely grated dark chocolate

Directions

Step 1: Prepare the Cake Pan

Preheat the oven to 350°F.

Lightly butter a 9-inch springform pan. Line the bottom with parchment paper and lightly butter the parchment. Dust the inside with cocoa powder and tap out any excess.

Step 2: Melt the Chocolate and Butter Using a Double Boiler

Fill a small saucepan with approximately 1 inch of water and bring it to a gentle simmer over medium-low heat.

Place the chopped chocolate and butter in the top of a double boiler or a heatproof bowl set over the saucepan, making sure the bottom of the bowl does not touch the water.

Stir occasionally until completely melted, smooth, and glossy. Keep the water at a gentle simmer and prevent steam or moisture from entering the chocolate mixture.

Remove the bowl from the heat and allow the mixture to cool for approximately 5 minutes.

Step 3: Add the Orange and Spices

Whisk 1/2 cup of the granulated sugar into the slightly cooled chocolate mixture.

Add the egg yolks one at a time, whisking after each addition.

Whisk in the vanilla extract, orange zest, orange juice, cinnamon, ginger, nutmeg, salt, and cocoa powder until smooth and evenly combined.

Step 4: Whip the Egg Whites

Place the egg whites in a clean, dry mixing bowl.

Using an electric mixer, beat on medium speed until foamy.

Gradually add the remaining 1/4 cup granulated sugar. Increase to medium-high speed and continue beating until glossy medium-stiff peaks form.

Step 5: Fold the Batter

Gently fold approximately 1/3 of the whipped egg whites into the chocolate mixture to lighten the batter.

Add the remaining egg whites in 2 additions, folding gently after each addition until no large white streaks remain.

Avoid overmixing to preserve the air incorporated into the egg whites.

Step 6: Bake the Cake

Pour the batter into the prepared springform pan and gently smooth the top.

Bake for 30 to 35 minutes, until the edges are set and slightly puffed and the center remains slightly soft.

A toothpick inserted near the center should come out with a few moist crumbs rather than wet batter.

Step 7: Cool Completely

Place the cake, still in its pan, on a wire rack and allow it to cool completely for approximately 2 hours.

Once cooled, carefully run a thin knife around the inside edge of the pan before releasing the springform ring.

Transfer the cake to a serving plate.

Step 8: Garnish and Serve

Dust the cooled cake with cocoa powder or confectioners’ sugar, if desired.

Garnish with fresh berries, orange zest, or finely grated dark chocolate.

Serve at room temperature for a softer, silkier texture or chilled for a firmer, truffle-like consistency.

Notes

For the best flavor, use good-quality bittersweet chocolate containing approximately 60 to 70 percent cacao. Semisweet chocolate can be substituted for a slightly sweeter cake. Check packaged ingredients for gluten-free labeling when necessary.

A double boiler provides gentle, even heat and helps prevent the chocolate from scorching. Keep the water at a gentle simmer, and make sure the bowl does not touch the water.

For a stronger citrus flavor, increase the fresh orange zest to 1 1/2 tablespoons rather than adding additional orange juice, which could affect the cake’s texture.

The cinnamon, ginger, and nutmeg provide a subtle warmth. For a more pronounced spiced flavor, increase the cinnamon to 1 1/4 teaspoons or add a small pinch of ground cloves.

Avoid overbaking. The center should remain slightly soft when removed from the oven and will continue setting as the cake cools. A slightly sunken or cracked surface is normal.

For clean slices, dip a sharp knife into hot water, wipe it dry, and repeat between cuts.

The cake can be prepared 1 day ahead. Cover and refrigerate once completely cooled. Allow it to stand at room temperature for approximately 30 minutes before serving for a softer texture.

Store leftovers tightly covered in the refrigerator for up to 4 days. Individual slices can be frozen for up to 2 months and thawed overnight in the refrigerator.
