Gluten-Free Cracked Cannoli Berry Parfait Recipe

About the Recipe

Make an easy Gluten-Free Cracked Cannoli Berry Parfait Recipe with ricotta, mascarpone, chocolate chips, berries, and crisp gluten-free shell pieces.

Creamy, crunchy, and filled with classic Italian-inspired flavors, this Gluten-Free Cracked Cannoli Berry Parfait Recipe offers an easy way to enjoy cannoli without filling individual pastry shells. Layers of smooth ricotta and mascarpone cream, mini chocolate chips, fresh berries, and crisp gluten-free cannoli shell pieces create an irresistible no-bake dessert.

Unlike traditional cannoli, this relaxed version uses broken gluten-free shells layered with the creamy filling and fruit. Serve it in mason jars, parfait glasses, or a large trifle bowl for a beautiful dessert that requires very little preparation.

Fresh citrus zest and cinnamon add warmth and fragrance, while the berries provide color and natural sweetness. Garnish each serving with chopped pistachios, shaved chocolate, candied orange peel, or additional citrus zest for an elegant finishing touch.

Prep Time: 15 minutes
Total Time: 15 minutes
Yield: 6 to 8 servings

Ingredients

For the Cannoli Cream
15 ounces whole milk ricotta cheese, well drained

16 ounces mascarpone cheese

1 cup confectioners’ sugar

1 teaspoon pure vanilla extract

2 teaspoons finely grated fresh lemon or orange zest

½ teaspoon ground cinnamon

3 ounces certified gluten-free mini chocolate chips

Pinch of salt

For Assembly
2 cups fresh berries, such as strawberries, blueberries, raspberries, blackberries, or a combination

2 to 3 cups broken certified gluten-free cannoli shells, gluten-free waffle cones, or crisp gluten-free cookies

Directions

Step 1: Prepare the Cannoli Cream

Place the drained ricotta, mascarpone, confectioners’ sugar, vanilla extract, citrus zest, cinnamon, and salt in a large mixing bowl. Mix until the filling is smooth, creamy, and evenly combined.

Step 2: Add the Chocolate Chips

Gently fold the mini chocolate chips into the cannoli cream until they are evenly distributed.

Step 3: Begin the Layers

Arrange a generous layer of broken gluten-free cannoli shells in the bottom of individual mason jars, parfait glasses, or a large serving bowl. Spoon a layer of cannoli cream over the shell pieces, followed by a layer of fresh berries.

Step 4: Complete the Dessert

Continue layering the gluten-free shell pieces, cannoli cream, and berries until the containers or serving bowl are full. Finish with additional shell pieces, mini chocolate chips, berries, or grated citrus zest.

Step 5: Serve

Serve the Gluten-Free Cracked Cannoli immediately for the crispest texture. For a softer, trifle-like dessert, refrigerate it for 15 to 30 minutes before serving.

Notes

Drain the ricotta thoroughly before preparing the filling. Excess moisture can make the cannoli cream thin or watery.

For the smoothest filling, allow the mascarpone to soften slightly before mixing. Avoid overmixing it because mascarpone can become grainy or separate.

Mini chocolate chips distribute evenly throughout the cream and provide chocolate flavor in every spoonful.

Strawberries, blueberries, raspberries, and blackberries all pair beautifully with the sweet cannoli cream. Use one variety or a colorful combination.

For additional crunch and Italian-inspired flavor, garnish the dessert with chopped pistachios, certified gluten-free shaved dark chocolate, gluten-free candied orange peel, or additional citrus zest.

If preparing the dessert in advance, refrigerate the cannoli cream and berries separately from the gluten-free shell pieces. Assemble the layers shortly before serving so the shells remain crisp.

Cannoli cream can be prepared up to one day in advance and stored in a covered container in the refrigerator. Stir it gently before assembling the dessert.

Traditional cannoli shells, churro chips, and ice cream cones generally contain wheat and should not be used in this gluten-free recipe. Choose products clearly labeled or certified gluten-free.

When serving someone with celiac disease or gluten sensitivity, verify that all packaged ingredients, including the confectioners’ sugar, vanilla extract, cinnamon, chocolate chips, garnishes, and shell alternatives, are gluten-free. Prevent cross-contact by using clean bowls, utensils, preparation surfaces, and serving containers.

This easy no-bake dessert is ideal for holidays, bridal showers, birthdays, Easter, Christmas, Mother’s Day, summer gatherings, and dinner parties.
