Gluten-Free Lump Crab Stuffed Portobello Mushrooms Recipe

Ingredients

1 teaspoon olive oil

1 small sweet onion, finely chopped

2 cloves garlic, minced

1¼ cups cooked lump crab meat, shredded

5 ounces Italian cheese blend, shredded

1 cup Parmesan cheese, shredded

¼ cup gluten-free panko breadcrumbs

1 tablespoon Italian seasoning

2 large portobello mushrooms

½ cup fresh basil, chopped and divided

4 tablespoons unsalted butter

Juice from ½ lemon

Salt and black pepper, to taste

Preparation

Prepare the Crab Filling

Preheat your oven to 350°F.

Heat the olive oil in a skillet over medium heat. Add the chopped onion and sauté for about 5 minutes, stirring occasionally, until softened and translucent.

Add the garlic and cook for 1 minute more, stirring constantly until fragrant. Remove the skillet from the heat and allow the mixture to cool slightly.

Transfer the onion and garlic mixture to a large mixing bowl. Add the lump crab meat, Italian cheese blend, Parmesan cheese, gluten-free panko breadcrumbs, Italian seasoning, and half of the chopped basil. Season lightly with salt and black pepper if desired. Stir until everything is evenly combined.

Prepare the Portobello Mushrooms

Gently wipe the mushrooms clean with a damp paper towel. Remove the stems and carefully scrape out the dark gills using a spoon to create more room for the filling.

Lightly brush the mushroom caps with olive oil and place them on a lightly greased baking sheet or baking dish.

Stuff and Bake

Divide the crab mixture evenly between the mushroom caps, pressing gently to fill each mushroom generously.

Place the stuffed mushrooms in the preheated oven and bake for 20 to 25 minutes, or until the filling is hot and bubbly and the tops are lightly golden brown.

Make the Lemon Basil Butter Sauce

While the mushrooms are baking, add the butter, lemon juice, and remaining chopped basil to a small saucepan.

Heat over low heat until the butter is completely melted. Stir gently to combine the flavors. Do not allow the sauce to boil.

Remove from the heat and keep warm until ready to serve.

Serve

Once the mushrooms are finished baking, remove them from the oven and allow them to rest for 2 to 3 minutes.

Transfer to serving plates and drizzle generously with the warm lemon basil butter sauce. Garnish with additional fresh basil and Parmesan cheese if desired.

Notes

For the best flavor, use fresh lump crab meat whenever possible. Canned crab can be substituted, but be sure to drain it thoroughly before mixing.

If you prefer a crispier topping, sprinkle additional gluten-free panko breadcrumbs and Parmesan cheese over the mushrooms before baking.

These stuffed mushrooms pair beautifully with a fresh garden salad, roasted asparagus, or gluten-free garlic bread.
