2 cups gluten-free all-purpose flour blend with xanthan gum
2 teaspoons baking powder
½ teaspoon baking soda
1 teaspoon kosher salt
1 tablespoon granulated sugar
6 tablespoons cold unsalted butter, cubed
¾ cup buttermilk, cold
1 large egg

Burger Patties

1½ pounds ground beef (80/20)
1 teaspoon Worcestershire sauce (gluten-free)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
1 teaspoon smoked paprika

Mushroom and Onion Topping

2 tablespoons butter
1 tablespoon olive oil
8 ounces cremini or baby bella mushrooms, sliced
1 large sweet onion, thinly sliced
1 teaspoon fresh thyme leaves
½ teaspoon kosher salt
¼ teaspoon black pepper

Directions

Step 1: Prepare the Biscuit Dough

Preheat the oven to 425°F. Line a baking sheet with parchment paper.

In a large bowl, whisk together the gluten-free flour, baking powder, baking soda, salt, and sugar. Cut the cold butter into the flour mixture until pea-sized crumbs form.

Whisk together the buttermilk and egg. Pour into the flour mixture and stir just until a soft dough forms.

Turn the dough onto a lightly floured surface and gently pat it into a 1-inch thick rectangle. Fold it over twice to create layers, then pat it back to 1-inch thickness.

Using a biscuit cutter, cut out four large biscuits and place them on the prepared baking sheet.

Step 2: Caramelize the Onions

Add the sliced mushrooms and thyme to the onions.

Season with salt and pepper.

Step 4: Prepare the Burger Patties

Combine the ground beef with Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, and pepper.

Divide into four equal patties, making a slight indentation in the center of each.

Step 5: Cook the Burgers

Heat a cast iron skillet or grill over medium-high heat.

Cook each burger for approximately 4 to 5 minutes per side for medium doneness, adjusting the cooking time to your preferred level.

During the final minute of cooking, place a slice of Swiss cheese on each burger and cover briefly to melt.

Step 6: Assemble the Burgers

Slice each biscuit in half.

If desired, lightly butter and toast the cut sides.

Place the burger on the bottom half of the biscuit.

Top generously with the caramelized onion and mushroom mixture.

Finish with the biscuit top and serve immediately.

Notes

For extra flavor, add a spoonful of garlic herb aioli or Dijon mustard to the biscuit before assembling.

An internal temperature of 160°F is recommended for ground beef.
