Yield
About 2 cups
Ingredients
1 cup neutral oil (avocado oil, vegetable oil, or grapeseed oil)
2 shallots, roughly chopped
6 cloves garlic, roughly chopped
¼ cup crushed red chili flakes
1 tablespoon soy sauce
1 teaspoon granulated sugar
½ teaspoon salt
1 teaspoon sesame oil
Optional Aromatic Spices
1 cinnamon stick (about 3 inches long)
4 star anise pods
Preparation
Step 1: Infuse the Oil
Place the neutral oil in a small saucepan over medium-low heat. If using the optional cinnamon stick and star anise, add them to the oil at this stage. Warm the oil slowly until it begins to shimmer gently. Avoid overheating the oil and do not allow it to smoke.
Step 2: Crisp the Aromatics
Add the chopped shallots and garlic to the warm oil. Cook slowly, stirring frequently, for 5 to 7 minutes or until the shallots and garlic become lightly golden and crisp. Reduce the heat if necessary to prevent burning.
If using the cinnamon stick and star anise, continue cooking until the oil becomes fragrant. Remove and discard the spices before proceeding to the next step.
Step 3: Add the Seasonings
Stir in the crushed red chili flakes, soy sauce, sugar, and salt. Cook for 30 to 60 seconds, stirring constantly, until the mixture becomes aromatic and the chili flakes bloom in the hot oil.
Step 4: Finish the Chili Crisp
Remove the saucepan from the heat. Stir in the sesame oil and mix well to combine all of the flavors.
Step 5: Cool and Store
Allow the chili crisp to cool completely at room temperature. As it cools, the flavors will continue to develop and the crispy texture will become more pronounced.
Transfer the cooled chili crisp to a clean, airtight glass jar and refrigerate until ready to use.
Notes
The secret to exceptional homemade chili crisp is cooking the garlic and shallots low and slow. High heat can quickly turn them bitter, while gentle cooking creates the perfect golden color and crispy texture.
Your choice of oil can subtly influence the flavor. Neutral oils such as avocado, vegetable, canola, and grapeseed oil allow the aromatics and spices to shine. Peanut oil can add a mild nutty undertone that pairs beautifully with the chili flakes.
For a milder chili crisp, substitute part or all of the crushed red pepper flakes with Korean gochugaru. This creates a slightly smoky flavor with a gentler level of heat. Combining different chili varieties can produce a more complex and balanced flavor profile.
The optional cinnamon stick and star anise add warmth, depth, and aromatic complexity. These ingredients create a richer chili crisp that works especially well with noodle dishes, dumplings, and roasted meats.
Straining is entirely optional. Leaving the crispy garlic, shallots, and chili flakes in the oil creates the traditional crunchy texture that chili crisp is known for. For a smoother finishing oil, partially strain the mixture before storing.
Store homemade chili crisp in a sealed container in the refrigerator for up to 1 month. The oil may become cloudy or slightly solidified when chilled, which is completely normal. Allow it to sit at room temperature for a few minutes before serving.
Although chili crisp can be enjoyed immediately after cooling, the flavor becomes even better after 24 hours as the ingredients have time to meld together. The result is a deeper, richer, and more balanced condiment.
