Prep Time: 15 minutes
Cook Time: 3 hours
Total Time: 3 hours 15 minutes
Yield: 12 to 16 servings

Ingredients

8 garlic cloves, minced

4 tablespoons olive oil

4 to 5 cans San Marzano peeled tomatoes with their juices, 28 ounces each

2 to 3 tablespoons tomato paste

1/2 teaspoon salt, plus more to taste

1/2 teaspoon freshly ground black pepper, plus more to taste

3 tablespoons chopped fresh basil

2 teaspoons chopped fresh oregano

1 Parmesan rind, optional

Directions

Step 1: Sauté the Garlic

Heat the olive oil in a large stainless steel pot over low to medium heat. Add the minced garlic and cook for 30 to 60 seconds, stirring constantly. The garlic should become fragrant without browning or burning.

Step 2: Add the Tomatoes and Seasonings

Carefully pour the San Marzano tomatoes and their juices into the pot. Add the tomato paste, salt, and black pepper. Stir until the tomato paste is evenly incorporated into the tomatoes.

Step 3: Add the Parmesan Rind

If using the Parmesan rind, place it in the pot after adding the tomatoes. The rind will slowly infuse the sauce with additional savory flavor as it simmers.

Step 4: Simmer the Sauce

Bring the sauce to a gentle simmer. Partially cover the pot, leaving a small opening for steam to escape. Cook over low heat for at least 3 hours, stirring occasionally and scraping the bottom of the pot to prevent sticking or scorching.

Step 5: Adjust the Texture

For a smooth tomato sauce, carefully blend the finished sauce directly in the pot with an immersion blender. For a thicker, more rustic sauce, leave it unblended. The San Marzano tomatoes will naturally soften and break down during the long cooking time.

Step 6: Add the Fresh Herbs

Remove and discard the Parmesan rind, if used. Stir the fresh basil and oregano into the finished sauce. Taste and season with additional salt and black pepper as needed.

Step 7: Serve the Sauce

Serve the warm San Marzano tomato sauce with pasta, meatballs, lasagna, pizza, or another favorite Italian-inspired meal.

Notes

A Parmesan rind is an easy way to add extra savory flavor and depth to homemade tomato sauce. Save the rind whenever you finish a block of
Parmesan cheese and store it in the freezer until needed.

The Parmesan rind will soften while the sauce cooks, but it will not completely melt. Remove it with tongs before blending or serving the sauce.

Keep the heat low throughout the cooking process. A gentle simmer allows the tomatoes to soften and develop a rich, naturally sweet flavor without scorching.

If the sauce becomes thicker than desired, stir in a small amount of water until it reaches your preferred consistency.

Add the fresh basil and oregano at the end of cooking to help preserve their bright flavor and aroma.

For an authentic DOP sauce, look for canned tomatoes displaying the official DOP certification on the package.

Allow the sauce to cool before transferring it to airtight containers or clean glass jars. Refrigerate for up to 5 to 7 days.

To freeze the sauce, let it cool completely before transferring it to airtight freezer containers or freezer-safe storage bags. Leave a small amount of room for expansion and freeze for up to 3 to 4 months.

Thaw frozen sauce overnight in the refrigerator. Reheat it gently in a saucepan over low to medium heat, stirring occasionally, until completely warmed through.
