Ingredients
1 (15-ounce) can white beans, drained and rinsed
2 tablespoons fresh parsley, chopped
½ cup grated Parmesan cheese
2 teaspoons truffle oil
1 teaspoon fresh lemon juice
Preparation
Step 1: Prepare the Ingredients
Drain and rinse the white beans thoroughly. Chop the fresh parsley and measure the remaining ingredients.
Step 2: Blend the Dip
Add the white beans, parsley, grated Parmesan cheese, truffle oil, and lemon juice to the bowl of a food processor.
Step 3: Process Until Smooth
Pulse several times to combine the ingredients, then blend continuously until the mixture becomes smooth and creamy. If a thinner consistency is desired, add 1 to 2 tablespoons of water or olive oil and blend again until the dip reaches your preferred texture.
Step 4: Serve
Transfer the dip to a serving bowl. Garnish with an extra drizzle of truffle oil, additional grated Parmesan cheese, and freshly chopped parsley if desired. Serve immediately with gluten-free crackers, toasted gluten-free bread, crostini, or fresh vegetables.
Notes
For the best flavor, use high-quality truffle oil, as a little goes a long way.
Cannellini beans, Great Northern beans, or navy beans all work well in this recipe.
Allow the dip to chill for 20 to 30 minutes before serving if you prefer a firmer texture and a more developed flavor.
Store leftovers in an airtight container in the refrigerator for up to 4 days. Stir before serving if any separation occurs.
