8 ounces white mushrooms, sliced
6 ounces shiitake mushrooms, sliced

1½ cups shaved or grated Manchego cheese

Preparation
Sauté the Aromatics
Heat the olive oil in a large sauté pan over medium heat. Add the rosemary and garlic and cook for about 30 seconds, stirring constantly, until fragrant.
Cook the Mushrooms
