During baking, the golden top crust is broken into large pieces and gently pressed into the hot cherry filling. ¾ cup plus 2 tablespoons tapioca flour, plus additional flour for rolling
¾ cup cornstarch
¼ cup plus 2 tablespoons superfine brown rice flour
¼ cup certified gluten-free oat flour
2 teaspoons granulated sugar
¼ teaspoon fine sea salt
1½ teaspoons xanthan gum
1 cup cold salted butter, cut into small cubes
3 large eggs
¼ teaspoon vanilla bean flecks

1 large egg
1 tablespoon water
Coarse sugar for sprinkling, optional
Cherry Vanilla Filling
4 cups pitted fresh or frozen cherries
1 cup granulated sugar
2 tablespoons fresh lemon juice
¼ cup cornstarch
⅛ teaspoon ground cinnamon, optional
1 teaspoon pure vanilla extract
Preparation
Step 1: Mix the dry crust ingredients
Place the tapioca flour, cornstarch, brown rice flour, oat flour, granulated sugar, sea salt, and xanthan gum in a food processor. Pulse several times until the ingredients are thoroughly combined.
Step 2: Cut the cold butter into the flour mixture
Add the diced cold butter to the food processor. Pulse in short intervals until the mixture resembles coarse crumbs and still contains small, visible pieces of butter. Leaving some butter pieces intact helps produce a flaky gluten-free crust.
Step 3: Bring the pastry dough together
Add the eggs and vanilla bean flecks. Pulse only until the dough begins to gather together. Avoid overmixing, which can make the finished pastry less tender.
Step 4: Shape and chill the dough
Transfer the dough to a surface lightly dusted with tapioca flour. Knead it gently a few times until smooth, then divide it into two equal portions. Shape each portion into a disk, wrap it tightly, and refrigerate for at least 2 hours.
Step 5: Cook the cherry vanilla filling
Place the cherries, granulated sugar, lemon juice, cornstarch, cinnamon, and vanilla extract in a medium saucepan. Cook over medium heat for 8 to 10 minutes, stirring frequently, until the cherries release their juices and the filling becomes glossy and thick enough to coat a spoon. Remove the saucepan from the heat and let the filling cool slightly.
Step 6: Preheat the oven and prepare the baking sheet
Preheat the oven to 375°F. Place a rimmed baking sheet on the center oven rack while the oven heats. The hot baking sheet will help the bottom pastry cook evenly and will catch any bubbling fruit juices.
Step 7: Form the bottom crust
Roll one chilled dough disk between two sheets of parchment paper until it is large enough to fit a 9-inch pie dish. Remove the top sheet of parchment, carefully invert the dough over the dish, and peel away the remaining parchment. Press the crust gently into the bottom and sides of the dish.
Step 8: Add the cherry filling
Spoon the slightly cooled cherry vanilla filling into the prepared crust. Spread the cherries evenly so every serving contains plenty of fruit.
