Step 1: Warm the Vegetable Stock

Heat the olive oil in a Dutch oven or large, heavy-bottomed pot over medium heat. Add the finely chopped shallot and cook for 3 to 5 minutes, stirring occasionally, until softened.

Step 3: Toast the Arborio Rice
