4 cups seedless watermelon, cut into uniform 1/4-inch-thick slices or small pieces
1 tablespoon olive oil
1 to 2 teaspoons Tajín seasoning
Pinch of red chili flakes, optional

Directions

Step 1: Prepare the Oven

Preheat the oven to 170°F or its lowest available temperature. Line a large rimmed baking sheet with parchment paper.

Step 2: Cut the Watermelon

Remove the rind and cut the watermelon into uniform slices or small pieces approximately 1/4 inch thick. Keeping the pieces consistent in size will help them dry at a similar rate.

Step 3: Arrange the Watermelon

Place the watermelon on the prepared baking sheet in a single layer. 

Leave space between the pieces and make sure they do not overlap so moisture can escape during drying.

Step 4: Dry the Watermelon

Place the baking sheet in the oven and dry the watermelon for 6 to 8 hours. Begin checking the pieces around the 6-hour mark. Turn them over if the undersides remain noticeably moist.

The watermelon is ready when the pieces have reduced in size, feel dry on the surface, and have a chewy texture with lightly crisp edges. Thinner pieces may finish before thicker ones, so remove individual pieces as they become ready.

Step 5: Cool Completely

Transfer the dried watermelon to a wire rack or leave it on the baking sheet to cool completely. The texture will become slightly firmer as the pieces cool.

Step 6: Add the Seasoning

Place the cooled watermelon in a large mixing bowl. Drizzle it lightly with the olive oil, then sprinkle it with the Tajín seasoning and optional red chili flakes.

Step 7: Toss and Serve

Gently toss the watermelon until the pieces are evenly coated. Serve immediately for the best texture.

Notes

Watermelon has a high moisture content, so the exact drying time will vary depending on the fruit, the thickness of the pieces, and the oven temperature.

For the driest texture, use slices approximately 1/4 inch thick. Pieces closer to 1/2 inch thick will generally remain softer and chewier.

Ovens vary at low temperatures. Check the watermelon regularly toward the end of the drying time to prevent thinner pieces from becoming overly dry.

For additional heat, add a small pinch of cayenne pepper with the Tajín seasoning.

Freshly grated lime zest may be added just before serving for a brighter citrus flavor.

Adding olive oil and seasoning after drying may soften the watermelon slightly. For a firmer texture, season only the amount you plan to serve and leave the remaining pieces uncoated.

Oven-dried watermelon is best enjoyed soon after it is seasoned. 

Refrigerate leftovers in an airtight container and discard them if they develop an unusual odor, appearance, or texture.
