Ingredients
Passion Fruit Mousse
2 teaspoons unflavored gelatin
4 tablespoons water
1 cup cold heavy cream
1 can sweetened condensed milk
1 cup passion fruit pulp or unsweetened passion fruit juice concentrate
2 tablespoons passion fruit liqueur
Passion Fruit Topping
Pulp of 2 fresh passion fruits with seeds (about ⅓ cup)
¼ cup granulated sugar
Preparation
Step 1: Bloom the Gelatin
In a small bowl, combine the gelatin and water. Stir until the gelatin is fully hydrated and allow it to sit for about 5 minutes.
Step 2: Dissolve the Gelatin
Microwave the gelatin mixture for approximately 30 seconds, or gently heat it over a double boiler until completely melted. Set aside to cool slightly.
Step 3: Blend the Mousse
Add the heavy cream, sweetened condensed milk, passion fruit pulp, and dissolved gelatin to a blender. Blend on high speed for about 5 minutes, or until the mixture is smooth, creamy, and thoroughly combined.
Step 4: Portion the Mousse
Pour the mousse into a large serving bowl or divide evenly among 4 individual dessert glasses.
Step 5: Chill Until Firm
Refrigerate for at least 3 hours, or until the mousse is fully set and has a light, airy texture.
Step 6: Prepare the Passion Fruit Topping
In a small saucepan, combine the fresh passion fruit pulp and sugar. Place over medium-low heat and stir occasionally until the sugar completely dissolves and the mixture begins to simmer.
Step 7: Thicken the Sauce
Reduce the heat and simmer for 1 to 2 minutes, or until the topping thickens slightly. Remove from the heat and allow it to cool to room temperature.
Step 8: Garnish and Serve
Spoon the cooled passion fruit topping over the chilled mousse just before serving. Serve cold and enjoy.
Notes
If you prefer to omit the gelatin, the mousse will still be delicious but will have a softer consistency. Allow it to chill for at least 5 to 6 hours to achieve the best texture.
This dessert can be prepared 1 to 2 days in advance, making it an excellent make-ahead option for parties and special occasions.
