¾ cup gluten-free graham cracker crumbs

1½ cups heavy whipping cream, very cold

1 teaspoon vanilla extract

1 cup sweetened condensed milk

⅓ cup fresh lime juice

2 teaspoons unflavored gelatin

1 lime, zested

Preparation

Prepare the Whipped Cream

Pour the chilled heavy whipping cream and vanilla extract into the bowl of a stand mixer fitted with the whisk attachment. Beat on high speed for 5 to 7 minutes, or until stiff peaks form. The whipped cream should be light, fluffy, and able to hold its shape.
