3 cups whole raw almonds
2 tablespoons extra virgin olive oil
1 tablespoon finely chopped fresh rosemary
1 tablespoon finely chopped fresh thyme
1 tablespoon finely chopped fresh flat-leaf parsley
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon finely grated lemon zest
1 teaspoon flaky sea salt
½ teaspoon freshly ground black pepper

Directions

Option 1: Flowered Roasted Almonds

Step 1: Prepare the Oven

Preheat the oven to 325°F. Line a large baking sheet with parchment paper.

Step 2: Make the Floral Glaze

In a large bowl, whisk together the honey, melted butter, vanilla extract, sea salt, and orange zest until smooth.

Step 3: Coat the Almonds

Add the almonds to the bowl and stir until every almond is evenly coated with the honey mixture.

Step 4: Roast

Spread the almonds in a single layer on the prepared baking sheet. Roast for 18 to 20 minutes, stirring once halfway through baking, until lightly golden and fragrant.

Step 5: Finish with Flowers

Allow the almonds to cool for about 5 minutes before gently tossing them with the rose petals, chamomile flowers, lavender buds, violet or pansy petals, and optional cane sugar. Adding the flowers after roasting preserves their vibrant color and delicate flavor.

Step 6: Cool Completely

Allow the almonds to cool completely before serving or storing.

Option 2: Herbed Roasted Almonds

Step 1: Prepare the Oven

Preheat the oven to 325°F. Line a baking sheet with parchment paper.

Step 2: Prepare the Herb Mixture

Combine the olive oil, rosemary, thyme, parsley, garlic powder, onion powder, lemon zest, sea salt, and black pepper in a large mixing bowl.

Step 3: Coat the Almonds

Add the almonds and toss until every almond is evenly coated with the herb mixture.

Step 4: Roast

Spread the almonds into a single layer on the prepared baking sheet. Roast for 18 to 20 minutes, stirring once halfway through baking until fragrant and lightly toasted.

Step 5: Cool

Remove the almonds from the oven and allow them to cool completely. They will continue to crisp as they cool.

Step 6: Serve

Enjoy the herbed almonds as a wholesome snack or serve them with artisan cheeses, cured meats, roasted vegetables, soups, or fresh salads.
